Abstract
A kitchen process and equipment for rolling out pastry etc. with a rolling pin which is displaced parallel to the surface of pastry board or slab. Two setting bars of equal thickness are laid flat, spaced apart on top of a flat pastry board. The bars are used as a supporting track on which a cylindrical rolling pin can be rolled back and forth. A lump of pastry placed between the two setting bars is progressively reduced in thickness by using the rolling pin until the pin can roll along the track, just touching a sheet of paste. The thickness of the sheet is equal to the thickness of a setting bar. The spacing between the setting bars is pref. used to limit the width of the rolled sheet of pastry. The setting bars are pref. parallel to each other. Pref. the spacing between them is adjustable as is the height of their top surfaces from the surfaces of the pastry board. Used for rolling out pastry for patisserie and confectionery prods., partic. for the bases of tart cases, shortbreads etc. Rolling out nougatine etc. Regular thickness of rolled sheet ensures consistent baking. The thickness is automatically obtained at a pre-selected level. The paste is not stretched, crushed or otherwise over-stressed.
