Abstract

A potato-based food is prepd. by (a) forming a pulp of raw potato, (b) mixing with dehydrated cooked potato and opt. semolina, cereal flour or tapioca to give a paste having moisture content 20-40% and (c) forming the paste into shapes which are then fried. Prods. have a low oil content and can be prepd. without wasting potato material.
