Abstract

Items to be frozen are placed separately and unwrapped upon a tray which is loaded into a freezer which deep-freezes the items by simple conduction, thus avoiding the harsh effects of blast-freezing or dipping in cryogenic fluid, the deep-frozen items are then immersed in water at 0 degrees C so that each item is completely enclosed in a thin protective skin of ice. This skin remains on the food item troughout its cold-storage life, protecting it from dehydration so that flavour is retained when the item is thawed for eating.
