Abstract

Bread-making dough lumps are loaded into shelves of a hoist-rack which is suspended from a hoist rope so that each shelf in turn can be brought to the lever of a narrow, loading/unloading slot in the wall of a closed fermentation cabinet which houses the hoist rack, the slot being closed by a hinged door when the slot is not in use. The hoist saves considerable manual labour since all loading and unloading of the rack are carried out at on level.
