Abstract
Food composition with reduced calorie content contains a mixture of food with water soluble, edible pullulan which gives a pleasant taste and smell but has no significant nutritional value. Bread. Pullulan is resistant to digestive enzymes and can partly replace starch to reduce food value. The ratio of pullulan/starch is 1 : 0.5-5. The composition may also be an aqueous liquid containing at least 0.05% pullulan. Pullulan is a polysaccharide prepared by the action of Pullularia pullulans culture on sucrose for 3-8 days under aerobic conditions. Orange drink was prepared from 1 litre orange juice, 5g of pullulan powder added slowly with stirring, 400ml of 50% maltitol and water to 2 litres. The product was like orange juice but had half the calorific value and no after taste.
