Abstract
Emulsions consisting of a milk fraction with a low fat content contain up to 85% wt. emulsified fat, of which at least 25% wt. consists of a non-milk fats, and 6-12% wt. fat-free, arhydrous components. The emulsified fat pref. consists of 50-100% non-milk fats, pref. a mixture of 30-40% solid soyabean oil and 25-35% wt semi-solid sunflower oil, the remainder consisting of liquid sunflower oil. The milk fraction with a low fat content consists of a mixture of skim milk and buttermilk and or butter serum. The emulsion pref. also contains an emulsifier and vitamins.
