Abstract
Un procedimiento de obtención continua de harina de trigo refinada, que comprende las etapas de: (a) suministrar una cantidad de grano de trigo acondicionado; (b) fraccionar el grano de trigo para obtener endospermo, salvado y germen; (c) separar y distribuir el endospermo, el salvado y el germen para poder ser tratados; (d) moler el endospermo que se obtiene en la etapa (c) para homogeneizar el tamaño de partícula de 150-180 micrómetros; (e) tratar el germen usando calor para reducir la reactividad de los lípidos contenidos en el mismo; (f) tratar el salvado obtenido en la etapa (c) de la siguiente manera: (f-i) separar la corriente de salvado procedente de la etapa (c) para producir un salvado fino de un diámetro de partícula de 200 micrómetros y un salvado grueso, y (f-ii) moler el salvado grueso de la etapa (f-i) para obtener un salvado pulverizado con un diámetro de partícula de 180 micrómetros; (g) mezclar el endospermo de la etapa (d), el germen de la etapa (e), el salvado fino de la etapa (f-i) y el salvado pulverizado de la etapa (f-ii) para obtener una harina de trigo integral blanquecina que consiste en 80,0 % de endospermo, 17,5 % de salvado y 2,5 % de germen.
