Abstract
Procedimiento para la elaboración de un caramelo para la higiene dental y caramelo obtenido. El procedimiento parte de polvo cristalino de xilitol, que se calienta a una temperatura del orden de 94°C hasta que el polvo de xilitol empiece a fundirse y se transforme en un líquido viscoso, para ser vertido en unos moldes que son depositados en una cámara de cristalización y endurecimiento durante un periodo comprendido entre 18 y 24 horas, cámara en la que se ajusta la humedad del aire al 40%, la presión a 1 Bar, y la temperatura a 25°C al menos durante las primeras 5 horas, de manera que transcurrido el periodo de tratamiento en la cámara de cristalización y endurecimiento se procede a la extracción y desmoldeo de los caramelos, que presentarán un carácter estable, duro, que se deshacen en la boca, resultando óptimos para la higiene bucal.
