Abstract

Procedimiento para el control de plagas en productos agroalimentarios mediante tratamiento con CO2 a presión. Consta de tres etapas: una primera etapa en la que se lleva a cabo un aumento de la presión de CO2 a 15-20 atmósferas, a una temperatura que oscila entre 15 y 40°C; una segunda etapa en la que se mantiene la presión durante 15-120 minutos y una tercera etapa en la que se lleva a cabo una disminución de la presión en un tiempo que oscila entre 0,5 minutos (disminución rápida) y 10 minutos (disminución lenta), y a una temperatura que oscila entre 10 y 30°C, cuando se trate de una disminución rápida y entre -15 y 8°C, cuando se trate de una disminución lenta.Procedure for the control of pests in food products by means of treatment with CO2 under pressure.
