Abstract

La presente invención se refiere a un método de conservación, almacenamiento y/o transporte de productos frescos en una cámara o contenedor (1) térmicamente aislado y un sistema para tal fin, caracterizados por emplear dos fases de enfriamiento: una primera fase rápida hasta el entorno de los +5ºC mediante una evaporadora convencional (3) y una segunda fase de enfriamiento lento hasta el entorno de los 0ºC mediante un conjunto de placas (4), ambas conectadas a una condensadora (2) mediante un circuito frigorífico (5) y unas válvulas (6). Dispone el sistema además de un control electrónico (10) que controla el funcionamiento del sistema según la información que recoge en una sonda de temperatura interior (7), una sonda temperatura (8) en la superficie de las placas y un sensor (9) de porcentaje de congelación de un fluido interno de las placas (4).
