Abstract
Providing a product for fermentation of bakery and pastry doughs. Product (A) for fermentation of bakery and pastry doughs comprises granules each consisting of a nucleus of dried, active yeast and a hydrophobic, homogeneous coating of melting point 15-80[deg] C. The coating isolates the nucleus and prevents activation of its fermentative activity at below 15[deg] C.
