Abstract

Procedure for microencapsulation of different products with albumin by preparing a solution or suspension of the substances to be microencapsulated in albumin and then denaturing the proteins (with heat or a chemical reaction). During the denaturation, microaggregates of albumin are formed which incorporate in their structure the substance to be microencapsulated. During the microencapsulation process the flavour and some pharmacotechnical properties, such as flow rate, improve, without any change in bioavailability or antimicrobial activity.
