Abstract
The fat, in the form of an aq. suspension cooled to below its m.pt., is treated with a microbial lipase at 10-35 deg.C for 2-24 hours, with or without agitation. Fatty acids are obtained with yields of over 90% without use of surfactants or other cpds. with emulsifying and/or buffering properties which increase the cost of and complicate conventional processes
