Method for crystallising honey.Method for crystallising a mixture of water and honey using a lyophilisation device, with a recipient for containing the honey-water mixture, with the following steps: prepare the water and honey mixture place the mixture in the recipient stir it by vibrations in the recipient until the mixture is homogeneous lyophilise the homogeneous water-honey mixture and lastly extract the freeze-dried honey from the recipient.Applicable to the food industry.< IMAGE >A mixt. of honey and water is prepared and placed in a container. After stirring by vibration until homogeneous, the mixt. is lyophilised and the drained honey extracted by freezing the container.
