Abstract
Description
Es ist bekannt, dass zum Brauen von Bier Wasser, Malz und Hopfen über verschiedene Temperaturstufen zur Bierwürze unter Rühren verarbeitet werden. Dabei ist der Läutervorgang eine sehr aufwändige Sache, zumal wenn es sich um haushaltsübliche Biermengen (Heimbrauer) handelt (siehe DE 29 50 7934 U1, DE 195 41 225 C1 u. a.). In bekannten Verfahren werden Filtersäcke (siehe DE 44 40 600 C1, DE 195 03 244 A1), Kessel mit Vollraumfilter mit Rührwerk (DE 195 24 783 C1, WO 98/32836), Kessel mit 2 Deckeln (WO 98/32836, DE 197 03 076 C1) und ähnliche Techniken (vgl. DE 29 51 7521 U1) zur Abtrennung der festen Bestandteile von den flüssigen angewendet. Ein Rührwerk ist zudem erforderlich (u. a. DE 296 13 939 U1, DE 296 18 738 U1, DE 197 47 050 A1, DE 197 37 007 C1). Nach erfolgtem Brauvorgang ist die Würze zu kühlen. Die in Patentanspruch 1 genannte Erfindung hat den Vorteil, dass nicht mehr feste und flüssige Maischebestandteile bewegt werden müssen, sondern nur die festen Bestandteile im Hydraulik-Rohr (siehe Abbildung Ziffer 4, in Fig. 1 im Kessel befindlich, in Fig. 2 aus dem Kessel herausgenommen) ausgewaschen werden. Nur die Flüssigkeit wird mittels einer Pumpe (siehe Abbildung Ziffer 2) bewegt. Ein Rührwerk entfällt dadurch. Ferner erfolgt der Läuter- und Filtriervorgang durch die Entnahme des Rohres (Abbildung Ziffer 4) aus dem Kessel (Abbildung Ziffer 1). Die Filterfläche kann aus einem ebenen Blech (Fig. 1) oder einer mit einem aufgesetzten Kegel vergrößerte Läuterblechfläche (Fig. 2, Abbildung Ziffer 5) bestehen. Das Bleche in Fig. 2 führen zu einem schnelleren Abfluss der Flüssigkeit. Das Rohr (Abbildung Ziffer 4) mit dem Treber kann problemlos entleert, gespült und wiederverwendet werden. Ein Umfüllen in einen extra vorhandenen Läuterbottich entfällt. Sollte das Hydraulik-Rohr außerhalb des Kessels betrieben werden, ist es gegen Wärmeverluste zu isolieren und beim Läutervorgang ist in geeigneter Weise für einen Rücklauf der Flüssigkeit in den Kessel zu sorgen. If the hydraulic pipe is operated outside the boiler, it must be insulated against heat loss and during the refining process, the liquid must be returned to the boiler in a suitable manner.
Mit dem Hydraulik-Rohr-Verfahren wird der Kontakt mit der Umgebungsluft minimiert. Damit werden Verkeimungsprobleme vermindert und Energieverluste gering gehalten. Der Platzbedarf für die Brauanlage ist geringer als bei der traditionellen Brautechnik. Durch Segmentierung des Rohres oder Veränderung der Distanz zwischen oberem und unterem Läuterblech (Abbildung Ziffer 6) kann die Braumenge ab einem durch die Kesselheizung (Fig. 2, Abbildung Ziffer 3) technisch erforderlichen Minimum bis zur maximalen Kapazitätsgrenze beliebig variiert werden, so dass z. B. für die Entwicklung neuer Biersorten neben einer optimalen Braumenge auch Kleinmengen als Proben in der gleichen Anlage erzeugt werden können. Bei entsprechender Isolierung kann der Braukessel auch zur i. d. R. unter Kühlung ablaufenden Gärung verwendet werden. Die Temperaturführung erfolgt über einen zeitgesteuerten Thermostat. Die Heizung kann durch einen elektrischer Tauchsieder oder eine Plattenheizung (elektrisch oder andere geeignete Energielieferanten) erfolgen. Dies gilt entsprechend für die Kühlschlangen oder -platten (Fig. 1, Abb. 3 und 9). The hydraulic pipe process minimizes contact with the ambient air. Die Abbildung zeigt das Prinzip des Verfahrens. Zwischen den Läuterblechen mit Schlitzen oder Löchern (Abbildung Ziffer 5) wird das Malz bzw. der Hopfen (Abbildung Ziffer 7) eingefüllt. Das Rohr wird in den Kessel (Abbildung Ziffer 1) mit dem auf Einmaischtemperatur erwärmten Wasser oder in die geläuterter Vorwürze gestellt und fixiert. Die Pumpe (Abbildung Ziffer 2) fördert nun die Flüssigkeit mit hydraulischem Druck durch das untere Läuterblech (Abbildung Ziffer 5), dann durch das Malz bzw. den Hopfen (Abbildung Ziffer 7), passiert das obere Läuterblech (Abbildung Ziffer 5) und ergießt sich wieder in den Kesselraum (Abbildung Ziffer 1). So wird der Flüssigkeitskreislauf geschlossen. Nach den jeweiligen Arbeitsschritten wird das Rohr (Abbildung Ziffer 4) aus dem Kessel (Abbildung Ziffer 1) nach Abnahme des Deckels (Abbildung Ziffer 8) entnommen und gereinigt. Zum Ablaufen der im Rohr (Abbildung Ziffer 4) befindlichen Flüssigkeit wird es durch eine Haltevorrichtung über dem Flüssigkeitsspiegel des Kessels (Abbildung Ziffer 1) fixiert. Die fertige Würze kann nun im Kessel ggf. unter Kühlung (Abbildung Ziffer 3 stellt sowohl Heiz- als auch Kühlschlangen dar, Abbildung Ziffer 9 alternativ oder ergänzend ein Heiz-/Kühlelement in Plattenform) vergoren werden. Je nach Bierart kann der Deckel (Abbildung Ziffer 8) nur aufgelegt oder aber druckstabil fixiert werden. The figure shows the principle of the process. After the respective work steps, the tube (figure number 4 ) is removed from the boiler (figure number 1 ) after removal of the cover (figure number 8 ) and cleaned. To drain the liquid in the pipe (figure 4 ), it is fixed by a holding device above the liquid level of the boiler (figure 1 ). The finished wort can now be fermented in the boiler, if necessary with cooling (Figure 3 shows both heating and cooling coils, Figure 9 alternatively or additionally a heating / cooling element in plate form). Depending on the type of beer, the lid (Figure 8 ) can only be put on or fixed in a pressure-stable manner.
