Abstract
本发明公开了一种营养保健型甜柿饼的制作方法,其特征为以下列步骤制作而成:清洗、甜柿叶冷冻破碎、提取、干燥、打浆、混配、胶磨、烘烤、沸腾制粒干燥、沸腾制粒干燥以及、压饼制备而成,制作过程不需要捏饼和薰硫,无任何添加剂,天然营养,安全无污染。本发明的一种营养保健型甜柿饼,是以完全熟透软化的甜柿和甜柿叶为原料制作而成。制成的柿饼,色泽红润、大小均匀一致、甘甜如饴,具备了甜柿果实对肠胃病、心血管病、肝炎等疾病的保健功能,同时还具备了甜柿叶含有较高的天然营养成份,具有软化血管、降压稳压、调节血酯和提高机体免疫力等功效。

技术领域
本发明属于食品加工领域,尤其涉及一种以完全熟透软化的完全甜柿和甜柿叶为原料的营养保健型甜柿饼的制作方法。
背景技术
柿栽培品种很多,依据柿果在树上自然脱涩程度及脱涩对种子的依赖情况分为:完全甜柿、不完全甜柿、完全涩柿和不完全涩柿。完全甜柿无论果实中有无种子均能在树上自然完全脱涩,次郎甜柿、前川次郎甜柿、花御所甜柿和富有甜柿等属于完全甜柿品种,果实长到8成熟时已能完全自然脱涩,摘下来可像苹果、梨、桃一样削皮后即吃,脆甜爽口没有涩味。据中国林科院测定,每100克甜柿鲜果肉内含可溶性糖11.68克.蛋白质0.57-0.67克.脂肪0.28-0.3克,此外还含有丰富的尼克酸,维生素B1、B2、E、C和胡萝卜素、铁、锌、硒等营养物质,且这些物质大大超过苹果、梨、桃、葡萄等水果。甜柿果肉还含有种类齐全的氨基酸,人类必需的8种氨基酸它几乎都有。因此常食甜柿,对肠胃病、心血管病、肝炎、高血压等疾病均有一定疗效,保健功能十分明显。且鲜果硬度大,抗挤压,有利于长途运输。甜柿还具有较高的药用价值,有健脾、治咳嗽、止血之功效。在日本、韩国,甜柿被称为益智果,大受青少年、中老年人群欢迎。蔗糖、葡萄糖、果糖、果胶是甜柿果实中主要的营养成分,甜柿通过常规榨汁后,甜柿果渣同样还残留一定量的糖分和果胶等各种营养物质。
柿叶为柿科(Ebenaceae)柿属(Diospyros L.)植物柿(Diospyros kaki L.f.)的新鲜或干燥叶。研究证实,柿叶中维生素C的含量特别丰富,每100g鲜嫩柿叶中含量为1000mg,干叶则高达2700~3000mg,相当于辣椒的9倍、菠菜的10倍高于水果中的猕猴桃,仅低于刺梨汁。另外还含有大量的胡萝卜素(约76μg/g)、黄酮苷(黄苷、杨梅树皮苷)、鞣质、酚类树脂、香豆精类化合物、还原搪、多糖、挥发油、氨基酸、有机酸(白桦脂酸、齐墩果酸、熊果酸)、叶绿素等。柿叶的药用价值早在明代《滇南本草》中即有记载。
石林甜柿是国家农产品地理标志登记保护产品,产于云南省石林县境内的鹿阜镇、石林镇、路美邑镇、板桥镇、长湖镇、西街口镇、圭山镇和大可乡。该品种是经过在当地训化的、在树上自然脱涩的次郎、前川次郎等品种,已有近30年的栽培历史。石林甜柿叶在不同生长时期中化学成分尤其是Vc变化规律和采摘时间与其他柿叶不同,与其他野生矮化柿树叶、安溪油柿叶不同。
传统柿饼的加工方法为:选柿果→削皮→摆盘、入烘房→熏硫→第一次烘烤(脱涩、软化),温度40±3℃,时间48~72小时→出房回软、揉捏、塑料膜覆盖晾晒48~72小时;第二批原料入烘房烘烤(脱涩、软化)48~72小时→第二次烘烤(脱水、干燥),温度50~55℃,12~16小时;第二批果出烘房软化、揉捏16~20小时→出烘房回软,捏饼整形;第二批果入烘房烘烤,50~55℃,24~30小时→收集容器中堆捂3~7天,再晾晒3~5小时,如此反复3次→收集容器中(与干燥柿饼分层置放)出霜→包装。中国专利号为200410012460的“柿饼成型生产方法与成型柿饼”发明专利,该发明公开的柿饼成型生产方法与成型柿饼,这种柿饼成型生产方法,是先把自然柿子制浆重新再成型生产柿饼的方法,其工艺的操作工序为:自然柿子去蒂、洗净柿子、制成柿浆、滤去皮渣、柿浆脱水、成型柿饼、烘干、焖抚、晾霜、出霜检验、包装或储放等,该生产方法的优点有:柿子打浆成型柿饼,可节约原料,不论柿子大、小、软、硬都能打浆成型柿饼,而且还比原工艺过程缩短;成型柿饼的生产过程采用封闭操作,较卫生、无污染,提高工效数十倍;柿子去蒂,既卫生、又避免了柿子发酸、腐烂。
以上柿饼的加工工艺都没有涉及用完全熟透软化的甜柿和甜柿叶为原料制作营养保健型柿饼的相关内容。
发明内容
本发明的目的正是为了弥补上述缺陷,提出一种以完全熟透软化的甜柿和甜柿叶为原料的营养保健型甜柿饼的制作方法。
一种营养保健型甜柿饼,其特征在于以完全熟透软化的甜柿果实和甜柿叶为原料,采用如下步骤制作:
第一步,清洗:将完全熟透软化的甜柿捡除杂质,除去柿蒂,撕掉柿皮,得到干净的甜柿果肉;甜柿叶用清水洗净,然后脱去附着在叶子表面的水分待用;
第二步,甜柿叶破碎、冷冻、干燥:春季采摘甜柿鲜叶,清洗干净后放入清水中浸泡20~40分钟取出,脱去附着在鲜柿叶表面的水滴,再将甜柿叶破碎成碎片后冷冻,最后将冰冻状态的甜柿叶碎片烘干至含水量5~7%;
第三步,提取:将甜柿叶碎片采用超声波提取方法制得甜柿叶浓缩液;
第四步,干燥:将甜柿叶浓缩液进行干燥,得到粉末状的甜柿叶提取物,物料水分含量控制在5~7%;
第五步,打浆:将甜柿果肉打浆,得到柿浆;
第六步,混配:按照每1kg柿浆加入1~200g甜柿叶提取物的比例进行混配;
第七步,胶磨:将混配好的柿浆和甜柿叶提取物进行胶磨处理;
第八步、烘烤:将胶磨过的混合物在50~60℃的温度下烘烤6-8小时,烘干至混合物呈干浸膏状态,水分含量控制在35~45%;
第九步、沸腾制粒干燥:将干浸膏状态的混合物进行制粒和干燥,得到颗粒状的物料,水份含量控制在14~16%;
第十步、压饼:将颗粒状的混合物放入压饼机进行压饼。
作为优选,所述的甜柿果实和甜柿叶采摘自海拔1200~2000米的石林甜柿树上,此时柿饼口感最佳。
作为优选,步骤二中将甜柿叶破碎成面积约1平方厘米大小的碎片最佳。
作为优选,步骤六中混配时以1Kg甜柿浆加入50~100g甜柿叶提取物的比例混合时口感最佳。
作为优选,考虑到该柿饼方便食用的特点,步骤十中可以将颗粒状的混合物压制成直径为1~3cm,厚度为0.5~1cm的迷你型柿饼。
作为改进,为保证柿饼的口感和营养价值,柿饼经真空包装和放入脱氧保鲜剂的方式进行保鲜。
本发明的一种营养保健型甜柿饼,制作过程不需要捏饼和薰硫,无任何添加剂,天然营养,安全无污染。

具体实施方式
实施例1:一种营养保健型甜柿饼,原料采摘自海拔1200~2000米的石林甜柿树上、完全熟透软化的石林甜柿果实和甜柿叶为原料,经过清洗、甜柿叶超声波提取、干燥、粉碎、甜柿软果打浆、混配、胶磨、烘烤、制粒、干燥、压饼、真空包装等工艺,制成一种色泽红润、大小均匀一致、甘甜如饴的营养保健型甜柿饼。该产品制作过程不需要捏饼和薰硫,无任何添加剂,天然营养,安全无污染,制作方法采用如下步骤。
第一步、清洗:将完全熟透软化的甜柿捡除杂质,除去柿蒂,撕掉柿皮,得到干净的甜柿果肉;春末夏初采摘甜柿叶用清水洗净,然后放入脱水机脱去附着在叶子表面的水分待用;
第二步、甜柿叶破碎、冷冻、干燥:春季采摘甜柿鲜叶,清洗干净后放入清水中浸泡30分钟取出,再脱去附着在鲜柿叶表面的大多数水滴,再将甜柿叶放入破碎机中破碎成面积约1平方厘米大小的碎片,然后冷冻到完全冰冻状态,最后将冰冻状态的甜柿叶碎片烘干至含水量为5~7%;
第三步、提取:将甜柿叶茶碎片放入超声波提取浓缩机组制得甜柿叶浓缩液;
第四步、干燥:将甜柿叶浓缩液放入闪蒸干燥机中进行干燥,得到粉末状的甜柿叶提取物,物料水分含量控制在5~7%;
第五步、打浆:将甜柿果肉放入打浆机进行打浆,得到柿浆;
第六步、混配:按照每1kg柿浆加入50~100g甜柿叶提取物的比例进行混配;
第七步、胶磨:将混配好的柿浆和甜柿叶提取物放入胶体磨进行胶磨处理;
第八步、烘烤:将胶磨过的物料倒入不锈钢盘,再放入烘箱,将温度控制在50~60℃,烘烤8~10小时,烘干至水分含量为35~45%,物料呈干浸膏状态;
第九步、沸腾制粒干燥:将干浸膏状态的物料放入沸腾制粒干燥机进行制粒和干燥,此步骤操作使物料含水量控制在14~16%,得到颗粒状的物料;
第十步、压饼:将颗粒状的物料放入压饼机进行压饼,压制成直径为3cm,厚度为1cm的迷你型柿饼,产品含水量控制在14~16%;
第十一步、包装:经步骤十一之后的柿饼采用真空包装等保鲜方式包装后即成为营养保健型的甜柿饼,为延长保质期,可在真空袋内放入适量的袋装型脱氧保鲜剂。
Claims (6)
1.一种营养保健型甜柿饼,其特征在于以完全熟透软化的甜柿果实和甜柿叶为原料,采用如下步骤制作:
第一步,清洗:将完全熟透软化的甜柿捡除杂质,除去柿蒂,撕掉柿皮,得到干净的甜柿果肉;甜柿叶用清水洗净,然后脱去附着在叶子表面的水分待用;
第二步,甜柿叶破碎、冷冻、干燥:春季采摘甜柿鲜叶,清洗干净后放入清水中浸泡20~40分钟取出,脱去附着在鲜柿叶表面的水滴,再将甜柿叶破碎成碎片后冷冻,最后将冰冻状态的甜柿叶碎片烘干至含水量5~7%;
第三步,提取:将甜柿叶碎片采用超声波提取方法制得甜柿叶浓缩液;
第四步,干燥:将甜柿叶浓缩液进行干燥,得到粉末状的甜柿叶提取物,物料水分含量控制在5~7%;
第五步,打浆:将甜柿果肉打浆,得到柿浆;
第六步,混配:按照每1kg柿浆加入1~200g甜柿叶提取物的比例进行混配;
第七步,胶磨:将混配好的柿浆和甜柿叶提取物进行胶磨处理;
第八步、烘烤:将胶磨过的混合物在50~60℃的温度下烘烤8-10小时,烘干至混合物呈干浸膏状态,水分含量控制在35~45%;
第九步、沸腾制粒干燥:将干浸膏状态的混合物进行制粒和干燥,混合物含水量控制在14~16%,得到颗粒状的物料;
第十步、压饼:将颗粒状的混合物放入压饼机进行压饼。
2.如权利要求1所述的一种营养保健型甜柿饼,其特征在于甜柿果实和甜柿叶采摘自海拔1200~2000米的石林甜柿树上。
3.如权利要求1所述的一种营养保健型甜柿饼,其特征在于甜柿叶破碎冷冻干燥步骤中是将甜柿叶破碎成面积约1平方厘米大小。
4.如权利要求1所述的一种营养保健型甜柿饼,其特征在于混配步骤中是以1Kg甜柿浆加入50~100g甜柿叶提取物的比例进行混合。
5.如权利要求1所述的一种营养保健型甜柿饼,其特征在于压饼步骤中将颗粒状的混合物压制成直径为1~3cm,厚度为0.5~1cm的迷你型柿饼。
6.如权利要求1所述的一种营养保健型甜柿饼,其特征在于压饼后采用真空包装的保鲜方式进行包装,并在真空袋内放入袋装型脱氧保鲜剂。
