本发明提供一种蛋白质过敏专用型临床营养配方,包括如下组分及其重量份数:15‑21份蛋白质和氨基酸、11‑15份脂肪、52‑57份碳水化合物、3.4‑4.2份膳食纤维、1.2‑1.8份常量元素、0.01‑0.04份微量元素、0.005‑0.02份脂溶性维生素、0.1‑0.3份水溶性维生素、0.005‑0.11份核苷酸、0.02‑0.06份天然植物化合物;本发明还提供上述临床营养配方的制备方法。本发明能够提高患者身体质量、增强免疫功能、缓解过敏症状,防止食物蛋白过敏人群发生过敏反应。

技术领域
本发明涉及营养配方领域,尤其涉及一种蛋白质过敏专用型临床营养配方及其制备方法。
背景技术
众多研究报道指出过敏性疾病近几年发病率呈持续上升趋势,过敏的发病率已经成为全球疾病的第六位,已成为危害儿童身心健康的一种常见的慢性疾病,美国每年用于儿童过敏的医药费用达到2-4亿美元。
在众多的过敏性疾病中,食物过敏是主要的诱因之一。食物过敏是机体对摄入的食物蛋白质产生的一种有害免疫反应,食物过敏已成为日益受到关注的公共卫生问题,婴幼儿时期由于胃肠道尚未发育成熟,免疫系统也未发育完善,因此很容易发生食物过敏,婴幼儿时期食物过敏发病率更明显高于成年人,婴幼儿食物过敏容易导致婴儿绞痛,更甚者会引起过敏性休克的全身反应,还会发生猝死综合征。
在众多的食物过敏中,蛋白质过敏是最常见的食物过敏之一。在易导致婴儿过敏的过敏原中,主要来源有牛奶、大豆、小麦、花生、坚果与鸡蛋,其中的蛋白过敏源中主要为牛奶蛋白和食物蛋白。牛奶中主要有四种主要蛋白质,包括β乳球蛋白、γ球蛋白、乳白蛋白和酪蛋白,其中β乳球蛋白和酪蛋白为常见的两个过敏源。当这些过敏源进入人机体后,可以通过IgE介导,使肥大细胞致敏并激活,释放大量的5-羟色胺、缓激肤等物质,从而发生多器官和系统的过敏现象;也可以通过非IgE介导,如嗜酸细胞介导或倒T细胞介导对牛奶蛋白产生系列过敏反应,在皮肤可以表现为湿疹、荨麻疹、皮肤瘙痒、嘴唇、面部水肿;消化系统可以表现为恶心、呕吐、腹泻或大便带血、肠痉挛、便秘、腹胀、喂养困难等;典型的呼吸道症状包括鼻痒、打喷嚏、流涕、咳嗽、喘息、声音嘶哑, CMPA较重者甚至会引起致命的喉水肿、窒息及过敏性休克;部分患儿由于不能及时干预,会导致营养不良、贫血和生长发育迟缓,故早期明确诊断和治疗非常重要。
近年来,随着人们生活方式的改变,显著降低了小儿早期接触正常微生物及病原体的机会,所以众多的易诱发蛋白质过敏性疾病中的牛奶蛋白过敏成为了婴幼儿食物过敏中最常见的蛋白质过敏之一。据相关资料显示,1岁以内小儿牛奶蛋白过敏的发生率占2%-7.5%。特应性皮炎是牛奶蛋白过敏的主要并发症之一,表现为炎症性、瘙痒性、复发性皮肤病,给小儿的成长发育带来了严重的影响。由于大多数普通配方奶粉由牛乳改进而来,牛乳中酪蛋白和乳清蛋白抗原性较强,容易导致婴儿发生蛋白质过敏反应。母乳喂养有助于避免异种蛋白的摄入,从而减少致敏原数量,降低过敏性疾病的发生风险,但目前纯母乳喂养较少。
国外研究表明,母乳不足时使用水解配方奶粉喂养可以预防过敏性疾病的发生,但国内对适度水解配方的过敏预防作用的研究尚有待进行。目前针对牛奶蛋白过敏,可以给予氨基酸配方奶粉或深度水解配方奶粉或适度水解配方奶粉喂养,干预治疗时间以3-12个月为宜。氨基酸配方奶粉是将牛奶蛋白经过特殊加工降低蛋白质成份的抗原性,使其终产物为寡肽,完全回避了牛奶蛋白的抗原性,且含有正常量的脂肪和碳水化合物,营养成份依然不变,主要用于中重度牛奶过敏患儿的治疗;深度水解配方奶粉是将牛奶蛋白水解为短肽链,显著降低乳清蛋白和酪蛋白的抗原性,主要用于轻中度牛奶过敏患儿的治疗;部分水解配方奶粉的牛奶蛋白是小肽段,水解程度较低,仍存在部分抗原活性,主要用于防止早期过敏的发展以及降低过敏风险。
治疗食物过敏的方法是消除膳食中变应原以及被怀疑的食物配方,通常指食物中的蛋白质,这是治疗食物过敏的基础。因此,对于无法得到充分母乳喂养的牛奶过敏的婴幼儿,需要深度水解蛋白或氨基酸配方作为基础替代乳品。但目前市场上水解乳清蛋白配方粉种类众多,对于水解乳清蛋白的水解度及肽链分布情况参差不齐,给食物蛋白过敏人群带来了一定的安全隐患。
中国发明CN106072530A公开了一种防蛋白过敏全营养配方食品,其配方在蛋白质、脂肪和碳水化合物、必需维生素和矿物质之外,经添加了酵素粉、益生菌和益生元成分,其虽然改善了蛋白质过敏婴儿对蛋白质的吸收问题,但其并未针对蛋白质过敏婴儿添加适合的特殊营养物质以帮助宝宝提高身体质量、缓解过敏症状。
因此,研制防止食物蛋白过敏人群发生过敏反应,又能根据蛋白质过敏人群所需的临床营养特征,提高身体质量、增强免疫功能、缓解过敏症状的产品,具有重要价值和广阔的市场。
发明内容
本发明的目的在于克服现有技术中的缺陷,提供一种蛋白质过敏专用型临床营养配方及其制备方法,其根据蛋白质过敏人群所需的临床营养特征,提供均衡的三大营养物质,还含有多种维生素和矿物质,提供高质量的营养,能够提高身体质量、增强免疫功能、缓解过敏症状;并且采用深度水解乳清蛋白、适度水解乳清蛋白等水解配方奶粉给予肠内营养支持,防止食物蛋白过敏人群发生过敏反应。

本发明的第一个目的是提供一种蛋白质过敏专用型临床营养配方,包括如下组分及其重量份数:15-21份蛋白质和氨基酸、11-15份脂肪、52-57份碳水化合物、3.4-4.2份膳食纤维、1.2-1.8份常量元素、0.01-0.04份微量元素、0.005-0.02 份脂溶性维生素、0.1-0.3份水溶性维生素、0.005-0.11份核苷酸、0.02-0.06份天然植物化合物;
其中,所述蛋白质包括氨基酸和蛋白肽;所述氨基酸包括牛磺酸,所述蛋白肽选自深度水解乳清蛋白、适度水解乳清蛋白、大豆肽粉、大豆低聚肽、小麦蛋白肽、蚕蛹蛋白肽、海洋鱼低聚肽粉、可乐肽、氨基肽、卵白蛋白肽中的至少一种;
其中,所述营养配方中,蛋白质:脂肪:碳水化合物的产能比为15~20: 25~35:50~55。

进一步地,所述蛋白质过敏专用型临床营养配方还包括0.1-1份膳食精华,所述膳食精华选自谷类、豆类、薯类、蔬菜类、菌藻类、坚果种子类、鱼虾类、禽畜肉类、水果类中的至少一种;其中,所述蔬菜类包括胡萝卜粉、洋葱粉、大蒜粉、椰菜粉,所述菌藻类包括金针菇粉,所述水果类包括柑橘粉、苹果粉。
本发明的第二个目的是提供一种上述蛋白质过敏专用型临床营养配方的干法工艺的制备方法,包括如下步骤:
步骤1,制备粉末脂肪;
步骤2,制备脂溶性维生素粉末和水溶性维生素粉末:将预定重量份数的脂溶性维生素作为芯材,选用卡拉胶、阿拉伯胶作为壁材,在高压下进行2次乳化均质处理,乳化均质时间为10~15min,然后进行喷雾瞬时干燥,以60~80目筛分制备脂溶性维生素粉末;将预定重量份数的水溶性维生素作为芯材,选用麦芽糊精、脂蛋白作为壁材,混合均匀,喷雾瞬时干燥,以60~80目筛分制备水溶性维生素粉末;
步骤3,将预定重量的蛋白质和氨基酸、核苷酸、碳水化合物、膳食纤维、常量元素、微量元素、天然植物化合物分别制备成粒径为150~250μm的粉末;
步骤4,将步骤1~3所制得的粉末依次加入锥形混合机或其他形式的混合机混合均匀制得配方混合物,经过杀菌处理后备用;
步骤5,将所述配方混合物制备成营养粉、营养乳剂、胶囊剂、片剂、丸剂或口服液中的至少一种;
其中,步骤1~3的顺序可相互更换。
进一步地,所述步骤1中制备粉末脂肪具体包括如下步骤:
1)制备壁材水溶液:取麦芽糊精273g、辛烯基琥珀酸淀粉44g、乳清蛋白186g、膳食纤维80g、水1L搅拌均匀;有条件时可边加热边搅拌至60℃,保持30分钟后冷却至室温;
2)将单甘酯取1.17g(总固形物浓度为0.2%)均匀溶于15.6mL混合植物油脂中;所述混合植物油脂由3mL橄榄油、6mL大豆油、3mL椰子油、0.8mL 紫苏油、2.5mL中链甘油三酯、0.2mL二十二碳六烯酸油脂、0.1mL花生四烯酸油脂组成;
3)将吐温80取1.17g(总固形物浓度为0.2%)均匀溶于所述壁材水溶液中;
4)将添加过乳化剂单甘酯的混合植物油脂与添加过乳化剂吐温80的壁材水溶液充分混合,得到混合溶液;
5)添加稳定剂琼脂取1.17g(总固形物浓度为0.2%)于所述混合溶液后,用水定容至200mL(总固形物浓度为25%),20000r/min下高速分散2分钟,得到乳状液;
6)将所述乳状液在均质压力25MPa下,均质3次,每次5分钟,得到均质乳状液;
7)将所述均质乳状液进行喷雾干燥,进风温度为195℃,出风温度为80℃,收集得到粉末脂肪。
进一步地,所述步骤3与步骤4之间还可以包括以下步骤:
制备药食同源成分粉末:采用粉碎机对预定重量份数的原料进行粉碎,将粉碎的原料置于容器中,加入重量为原料重量的3~8倍的水,进行浸泡3~4小时,然后对浸泡液进行煎煮30~60min,过滤去除原料,留取煎煮液,对煎煮液进行喷雾干燥,以60~80目筛分制备药食同源成分粉末。该步骤可与步骤1~3的顺序相互更换。
制备膳食精华粉末:将胡萝卜、洋葱、大蒜、椰菜、金针菇、柑橘、苹果分别使用打浆机打成浆汁后混匀,过120目筛,按料液量的20~30%加入抗性淀粉、异麦芽低聚糖后充分搅拌溶解得到混合浆液,在均质压力25MPa下,对混合浆液均质3次,每次5分钟,然后对均质液进行灭菌并采用压力式喷雾干燥器进行干燥,以80~100目筛分制备得到膳食精华粉末。该步骤可与步骤1~3的顺序相互更换。
其中,所述步骤5中可选择性地增加适量的食品增稠剂和食品添加剂。所述食品增稠剂选自瓜尔胶、黄原胶、槐豆胶、魔芋胶、果胶、卡拉胶、琼脂、明胶、阿拉伯胶中的至少一种;所述食品添加剂选自阿斯巴甜、食用香精香料、红糖中的至少一种。更优选为卡拉胶、阿拉伯胶、瓜尔胶、阿斯巴甜、食用香精香料。
进一步地,上述蛋白质过敏专用型临床营养配方的干法工艺的制备方法的操作步骤均需在惰性气体的保护下进行,所使用的惰性气体为氮气、氩气、氦气等。在惰性气体的保护下进行上述操作步骤可以防止产生粉末爆炸的危险。
另外,本发明还提供一种上述蛋白质过敏专用型临床营养配方的湿法工艺的制备方法,包括如下步骤:
步骤1,将预定重量份数的蛋白质和氨基酸、脂肪、碳水化合物、膳食纤维、常量元素、微量元素、脂溶性维生素、水溶性维生素、核苷酸、天然植物化合物,在预定量的水中,按照原材料的物理性状,按照先后顺序依次添加,在添加的同时进行搅拌,制得原料的混合乳液;
步骤2,将步骤1获得的混合乳液进行乳化均质、浓缩杀菌,获得浓缩液;
步骤3,将步骤2获得的浓缩液进行喷雾干燥,过筛,制备成粉末,将所述粉末制备成营养粉、营养乳剂、胶囊剂、片剂、丸剂或口服液中的至少一种。
本发明中采用包括山楂、鸡内金、山药、茯苓、蜂蜜的药食同源成分,上述成分配伍增效后具有健胃消食、增强机体抗病能力之效,其改善了传统营养配方常使婴儿产生胀气、不易吸收等消化问题,有助于促进营养配方中各营养物质的吸收,增强婴儿体质,加快婴幼儿的生长发育。
山楂能促进胃液分泌帮助消化,具有很好的健胃消食功能;山楂中含有的解脂酶对于脂肪类的食物具有很好的消化作用,能够有效地促进身体中胃液的分泌,提高消化能力;
鸡内金具有消食健胃功效,并且可以健运脾胃,与山楂同用可进一步增强消食化积的功效;
山药有利于脾胃消化吸收功能,并且山药所含的淀粉酶有水解淀粉为葡萄糖的作用,能够直接为大脑提供热能,对健脑具有重要作用;同时山药营养丰富,具有增强神经细胞活性,补心气、安心神、治健忘、养心益智,增强记忆功能;
茯苓能够增加巨噬细胞的细胞毒性作用、增加酸性非特异酯酶阳性淋巴细胞数、增强T淋巴细胞的细胞毒性、羟甲基茯苓多糖能明显增强小鼠脾抗体分泌细胞数以及特异的抗原结合细胞数,具有增强机体免疫功能的作用;
蜂蜜自古以来就被认为是一种营养丰富的食品和药品,有消炎、祛痰、润肺、止咳的功效,长期服用,还可以缓解哮喘症的发作;同时蜂蜜还可以预防过敏;蜂蜜里面还含有微量蜂毒,它是蜜蜂体内的一种有毒液体,蜂毒具有促肾上腺皮质激素样作用,能改善人体内环境状态,调节机体免疫力,具有抗过敏、抗辐射、增强机体抗病能力的作用。
本发明中采用包括胡萝卜、洋葱、金针菇、大蒜、柑橘、椰菜、苹果的膳食精华成分,上述成分配伍增效后具有缓解过敏症状、预防炎症之效,其针对蛋白质过敏婴幼儿可能出现的过敏症状,起到了有效的预防和缓解作用,提高了婴儿的身体质量,有助于婴儿的生长发育。
胡萝卜、洋葱、金针菇、大蒜中均含有大量的抗炎、抗过敏物质,能够有效预防花粉过敏症、过敏性皮炎等过敏反应;
柑橘可以调和肠胃,刺激肠胃蠕动,帮助排气,还能镇定消化道,增加胃口、刺激食欲;柑橘中富含维生素C,维生素C在体内能够抑制组胺的生成,且可改善毛细血管通透性,减少组织液的渗出,从而缓解过敏症状;
椰菜所富含的槲皮素能有效防止过敏和哮喘,具有抗炎和抗组胺的特性;同时花椰菜芽苗含有丰富的莱菔硫烷,是一种强效的抗炎化合物,其在刺激抗氧化反应方面具有明显的生物效应,试验剂量的花椰菜芽苗能够造成谷胱甘肽巯基转移酶的数量增倍,这种酶在人体中起到了抗氧化剂的作用,能够有效的预防哮喘、过敏和慢性阻塞性肺病;
苹果所富含的槲皮素能有效防止过敏和哮喘,具有抗炎和抗组胺的特性;苹果中的多酚能通过减轻过敏小鼠的耳肿胀和遗传性过敏症患者的皮肤炎症而对组胺起到抑制作用,有助于蛋白质过敏症状的缓解。
本发明采用上述技术方案,与现有技术相比,具有如下技术效果:
1)本发明的蛋白质过敏专用型临床营养配方采用深度水解蛋白,深度水解蛋白不仅溶解性好,消化吸收率高,耐酸、耐热,同样也具有多种生理调节功能,如降血压、降胆固醇、抗菌、抗癌等,蛋白被深度水解为极细小的片段,大幅降低了触发过敏反应的风险,主要用于轻中度牛奶过敏患儿的治疗;采用适度水解乳清蛋白,蛋白被适度水解为小肽段,主要用于防止早期过敏的发展以及降低过敏风险。
2)本发明添加4:1的ω-6不饱和脂肪酸和ω-3不饱和脂肪酸,多不饱和脂肪酸合理配比,参与磷脂合成、胆固醇代谢、损伤组织的修复、新生组织的生长,保护皮肤免受射线损伤,对脑、神经组织及视网膜发育具有重要作用,参与激素合成,对心血管疾病具有保护作用。
3)本发明添加合理配比的二十二碳六烯酸和花生四烯酸,在婴儿的生长发育中,多不饱和脂肪有着重要的结构和功能,如花生四烯酸(C20-4,n-6,ARA) 和DHA,它们在母乳中以磷脂的形式天然存在;ARA和DHA对大脑的发展和新生儿视网膜有积极影响;在成人中,ARA和DHA可以由亚油酸和α-亚麻酸合成,但婴儿的合成能力有限;DHA和ARA从出生前至出生后2岁在婴儿前脑中持续增加,从妊娠第26周开始在胎儿大脑中积累,到妊娠末期3个月中持续;由于1岁~3岁幼儿处于生长发育的高峰期,因此添加DHA和ARA,对于婴幼儿智力和体格的发育尤为重要。
4)本发明添加核苷酸0.11-1.2份,可以减少腹泻的发生,同时增加机体免疫力,使脂肪、微量元素更易吸收。
5)本发明强化牛磺酸0.3-0.6份,牛磺酸化学名为2-氨基乙磺酸,是半胱氨酸经脱羧基并将硫氧化为磺酸根而衍生的一种β-氨基磺酸;牛磺酸的生物学作用包括结合胆汁酸、抗氧化及参与大脑和视网膜的正常发育等。

一种如实施例1~实施例5所述的蛋白质过敏专用型临床营养配方的制备方法如下:
1)制备粉末油脂(粉末脂肪):
a)制备壁材水溶液:取麦芽糊精273g、辛烯基琥珀酸淀粉44g、乳清蛋白 186g、膳食纤维80g、水1L搅拌均匀(有条件边加热边搅拌至60℃,保持30分钟后冷却至室温)。
b)将单甘酯取1.17g(总固形物浓度为0.2%)均匀溶于15.6mL油脂中(橄榄油3mL、大豆油6mL、椰子油3mL、紫苏油0.8mL、中链甘油三酯2.5mL、二十二碳六烯酸油脂0.2mL、花生四烯酸油脂0.1mL)。
c)将吐温80取1.17g(总固形物浓度为0.2%)均匀溶于壁材水溶液中。
d)将添加过乳化剂单甘酯的混合植物油脂与添加过乳化剂吐温80的壁材水溶液充分混合。
e)添加稳定剂琼脂取1.17g(总固形物浓度为0.2%)进混合溶液后,用水定容至200mL(总固形物浓度为25%),20000r/min下高速分散2分钟。
f)均质压力为25MPa,均质3次(每次5分钟),制得均质乳状液。
g)将制得的乳状液进行喷雾干燥,进风温度为195℃,出风温度为80℃。收集粉末油脂(粉末脂肪)。
2)制备药食同源成分粉末:采用粉碎机对预定重量份数的原料进行粉碎,将粉碎的原料置于容器中,加入重量为原料重量的3~8倍的水,进行浸泡3~4小时,然后对浸泡液进行煎煮30~60min,过滤去除原料,留取煎煮液,对煎煮液进行喷雾干燥,以60~80目筛分制备药食同源成分粉末;
3)制备维生素粉末:将预定重量份数的脂溶性维生素作为芯材,选用卡拉胶、阿拉伯胶作为壁材,在高压下进行2次乳化均质处理,乳化均质时间为 10~15min,然后进行喷雾瞬时干燥,以60~80目筛分制备脂溶性维生素粉末;将预定重量份数的水溶性维生素作为芯材,选用麦芽糊精、脂蛋白作为壁材,混合均匀,喷雾瞬时干燥,以60~80目筛分制备水溶性维生素粉末;
4)将预定重量的蛋白质和氨基酸、短肽、核苷酸、碳水化合物、膳食纤维、常量元素、微量元素、天然植物化合物分别制备成粒径为150~250μm的粉末;
5)将步骤1)~步骤4)所制得的粉末依次加入锥形混合机或其他形式的混合机混合均匀制得配方混合物,经过杀菌处理后,备用;
6)根据常规技术手段将步骤5)中的配方混合物制备成营养粉、营养乳剂、胶囊剂、片剂、丸剂或口服液中的至少一种。
在步骤6)中,可选择性地增加适量的食品增稠剂和食品添加剂。所述食品增稠剂为瓜尔胶、黄原胶、槐豆胶、魔芋胶、果胶、卡拉胶、琼脂、明胶、阿拉伯胶中的至少一种,所述食品添加剂为阿斯巴甜、食用香精香料、红糖中的至少一种;更优选卡拉胶、阿拉伯胶、瓜尔胶、阿斯巴甜、食用香精香料。
上述操作步骤均需在惰性气体的保护下进行,比如氮气、氩气、氦气等,以防止产生粉末爆炸的危险。
按照所述配方可制备成粉状、颗粒状、胶囊状、片剂状、饮料等类别。
实施例7
本实施例为验证实施例。
本验证实施例验证本发明所述的蛋白质过敏专用型临床营养配方对蛋白质过敏患者的影响。本实施例采用实施例1、4和5的配方制备的冲剂以及下述对比例:
对照组:市售传统防蛋白过敏全营养配方奶粉;
实验组1:采用实施例1的营养配方制备的冲剂;
实验组2:采用实施例4的营养配方制备的冲剂;
实验组3:采用实施例5的营养配方制备的冲剂;
实验组4:采用实施例1的营养配方中删除核苷酸制备的冲剂;
实验组5:采用实施例4的营养配方中删除膳食精华制备的冲剂;
实验组6:采用实施例4的营养配方中删除药食同源成分制备的冲剂;
以上每组选用自愿服用相应冲剂的蛋白质过敏婴幼儿30名,其病情程度相似。根据婴幼儿的年龄及相应的情况给予上述冲剂喂养,其他辅食等给予情况保持不变。营养干预时间共计3个月,观察并统计患儿营养干预前后的消化道症状和疗效的差异。实验结果如下表所示:
表一为不同营养干预前后患儿的消化道症状比较。
表二为不同营养干预前后疗效的比较。其中疗效的判定标准为:(1)显效:营养干预后每天腹泻减至两天以下,大便性状恢复,湿疹减轻,皮损消退面积高于80%,临床表现完全消失,患儿体重明显增加。(2)有效:营养干预后每天腹泻次数减至低于4次,且水分明显减少,患儿体重无明显增加;湿疹皮损面积消退30%-80%,临床表现基本消失,患儿体重无明显增加。(3)无效:营养干预后患儿腹泻症状无缓解,皮损面积消退小于30%,原有临床症状、体征无改善,患儿体重下降。

由上表可知,本发明的蛋白质过敏专用型临床营养配方,相比于市售传统防蛋白过敏全营养配方,干预3个月后,患儿的呕吐、腹泻和便秘的消化道症状均有显著改善。添加了本发明所述的膳食精华和药食同源成分的实验组的实验结果其效果更为明显。

由上表可知,本发明的蛋白质过敏专用型临床营养配方,相比于市售传统防蛋白过敏全营养配方,干预3个月后,总的有效率有显著改善。添加了本发明所述的膳食精华和药食同源成分的实验组的实验结果其效果更为明显。
通过上述实施例可知,本发明所述的蛋白质过敏专用型临床营养配方能够根据蛋白质过敏人群所需的临床营养特征,提供均衡的三大营养物质,还含有多种维生素和矿物质,提供高质量营养,增强免疫功能;并且采用深度水解乳清蛋白、适度水解乳清蛋白等水解配方奶粉给予肠内营养支持,防止食物蛋白过敏人群发生过敏反应。本发明采用的药食同源成分配伍增效后具有健胃消食、增强机体抗病能力之效,其改善了传统营养配方常使婴儿产生胀气、不易吸收等消化问题,有助于促进营养配方中各营养物质的吸收,增强婴儿体质,加快婴幼儿的生长发育;本发明采用的膳食精华配伍增效后具有缓解过敏症状、预防炎症之效,其针对蛋白质过敏婴幼儿可能出现的过敏症状,起到了有效的预防和缓解作用,提高了婴儿的身体质量,有助于婴儿的生长发育。
以上对本发明的具体实施例进行了详细描述,但其只是作为范例,本发明并不限制于以上描述的具体实施例。对于本领域技术人员而言,任何对本发明进行的等同修改和替代也都在本发明的范畴之中。因此,在不脱离本发明的精神和范围下所作的均等变换和修改,都应涵盖在本发明的范围内。
Claims (10)
1.一种蛋白质过敏专用型临床营养配方,其特征在于,包括如下组分及其重量份数:15-21份蛋白质、11-15份脂肪、52-57份碳水化合物、3.4-4.2份膳食纤维、1.2-1.8份常量元素、0.01-0.04份微量元素、0.005-0.02份脂溶性维生素、0.1-0.3份水溶性维生素、0.005-0.11份核苷酸、0.02-0.06份天然植物化合物;
其中,所述营养配方中,蛋白质:脂肪:碳水化合物的产能比为15~20:25~35:50~55;
其中,所述蛋白质包括氨基酸和蛋白肽;所述氨基酸包括牛磺酸,所述蛋白肽选自深度水解乳清蛋白、适度水解乳清蛋白、大豆肽粉、大豆低聚肽、小麦蛋白肽、蚕蛹蛋白肽、海洋鱼低聚肽粉、可乐肽、氨基肽、卵白蛋白肽中的至少一种。
2.根据权利要求1所述的一种蛋白质过敏专用型临床营养配方,其特征在于,所述蛋白肽包括深度水解乳清蛋白、适度水解乳清蛋白、大豆肽粉中的至少一种。
3.根据权利要求1所述的一种蛋白质过敏专用型临床营养配方,其特征在于,所述营养配方中,蛋白质:脂肪:碳水化合物的产能比为17:30:53。
4.根据权利要求1所述的一种蛋白质过敏专用型临床营养配方,其特征在于,所述脂肪中,ω-6不饱和脂肪酸与ω-3不饱和脂肪酸的比例为3~6:1~2。
5.根据权利要求1所述的一种蛋白质过敏专用型临床营养配方,其特征在于,所述脂肪包括二十二碳六烯酸和花生四烯酸,所述二十二碳六烯酸占总脂肪的重量比例为1%~2%,所述花生四烯酸占总脂肪的重量比例为0.4%~2.4%。
6.根据权利要求1所述的一种蛋白质过敏专用型临床营养配方,其特征在于,所述核苷酸的重量份数为0.11-1.2份。
7.根据权利要求1所述的一种蛋白质过敏专用型临床营养配方,其特征在于,还包括0.1-1份药食同源成分,所述药食同源成分选自山楂、鸡内金、桑葚、枸杞、益智仁、山药、茯苓、麦芽、蜂蜜、红枣中的至少一种。
8.根据权利要求1所述的一种蛋白质过敏专用型临床营养配方,其特征在于,还包括0.1-1份膳食精华,所述膳食精华选自谷类、豆类、薯类、蔬菜类、菌藻类、坚果种子类、鱼虾类、禽畜肉类、水果类中的至少一种;其中,所述蔬菜类包括胡萝卜粉、洋葱粉、大蒜粉、椰菜粉,所述菌藻类包括金针菇粉,所述水果类包括柑橘粉、苹果粉。
9.根据权利要求1-8中任一项所述的蛋白质过敏专用型临床营养配方的制备方法,其特征在于,包括如下步骤:
步骤1,制备粉末脂肪;
步骤2,制备脂溶性维生素粉末和水溶性维生素粉末:将预定重量份数的脂溶性维生素作为芯材,选用卡拉胶、阿拉伯胶作为壁材,在高压下进行2次乳化均质处理,乳化均质时间为10~15min,然后进行喷雾瞬时干燥,以60~80目筛分制备脂溶性维生素粉末;将预定重量份数的水溶性维生素作为芯材,选用麦芽糊精、脂蛋白作为壁材,混合均匀,喷雾瞬时干燥,以60~80目筛分制备水溶性维生素粉末;
步骤3,将预定重量的蛋白质和氨基酸、核苷酸、碳水化合物、膳食纤维、常量元素、微量元素、天然植物化合物分别制备成粒径为150~250μm的粉末;
步骤4,将步骤1~3所制得的粉末依次加入混合机混合均匀制得配方混合物,经过杀菌处理后备用;
步骤5,将所述配方混合物制备成营养粉、营养乳剂、胶囊剂、片剂、丸剂或口服液中的至少一种;
其中,步骤1~3的顺序可相互更换。
10.根据权利要求9所述的制备方法,其特征在于,所述步骤1中制备粉末脂肪具体包括如下步骤:
1)制备壁材水溶液:取麦芽糊精273g、辛烯基琥珀酸淀粉44g、乳清蛋白186g、膳食纤维80g、水1L搅拌均匀;
2)将单甘酯取1.17g(总固形物浓度为0.2%)均匀溶于15.6mL混合植物油脂中;所述混合植物油脂由3mL橄榄油、6mL大豆油、3mL椰子油、0.8mL紫苏油、2.5mL中链甘油三酯、0.2mL二十二碳六烯酸油脂、0.1mL花生四烯酸油脂组成;
3)将吐温80取1.17g(总固形物浓度为0.2%)均匀溶于所述壁材水溶液中;
4)将添加过乳化剂单甘酯的混合植物油脂与添加过乳化剂吐温80的壁材水溶液充分混合,得到混合溶液;
5)添加稳定剂琼脂1.17g(总固形物浓度为0.2%)于所述混合溶液后,用水定容至200mL(总固形物浓度为25%),20000r/min下高速分散2分钟,得到乳状液;
6)将所述乳状液在均质压力25MPa下,均质3次,每次5分钟,得到均质乳状液;
7)将所述均质乳状液进行喷雾干燥,进风温度为195℃,出风温度为80℃,收集得到粉末脂肪。
