Abstract
本发明涉及食品技术领域,具体涉及一种柿子保健软糖的加工工艺。其特征在于,以柿子、南瓜、沙参、芡实、黄芪、茯苓、琼脂、蜂蜜、麦芽糖为原料,通过原材料预处理、熬糖、浇模成型、干燥、包装加工步骤加以制备。本发明采用独特的工艺,对柿子进行预处理,有效的去除了柿子中富含的单宁成分,改善了柿子口感苦涩的缺点,使其口味更为甘甜、清爽可口,成品软糖口感软滑,甜而不腻、营养丰富,添加的中药互相配伍,协同增效,使本发明的软糖具有养阴润肺、益胃生津、健脾和胃等保健功能,是一种低糖、低脂的健康食品。

本发明涉及食品加工技术领域,具体涉及一种柿子保健软糖的加工工艺。
背景技术
软糖因其柔软、Q弹的口感备受人们的喜欢,但是随着人们的生活水平的提高,人们更渴望能买到具有各种保健功能的药食两用型的软糖,但目前市场上很少见到。
柿子:是柿科植物干果类水果,成熟季节在十月左右,果实形状较多,如球形、扁桃、方形等;柿子营养价值很高,含有丰富的蔗糖、葡萄糖、果糖、蛋白质、胡萝卜素、维生素C、瓜氨酸、碘、钙、磷、铁。所含维生素和糖分比一般水果高1~2倍左右,假如一个人一天吃一个柿子,所摄取的维生素C,基本上就能满足一天需要量的一半。中国传统医学认为,柿子味甘、涩,性寒,归肺经。《本草纲目》中记载“柿乃脾、肺、血分之果也。其味甘而气平,性涩而能收,故有健脾涩肠,治嗽止血之功。”同时,柿蒂,柿霜,柿叶均可入药。
具研究证明,柿果与其他水果最大的区别在于它含有高出其他水果十多倍甚至几十倍的单宁类物质,而水溶性单宁是柿果产生涩味的主要物质,而使其入口有苦涩感,影响其食用口感。
南瓜:葫芦科南瓜属的一个种,一年生蔓生草本植物,南瓜中丰富的类胡萝卜素在机体内可转化成具有重要生理功能的维生素A,从而对上皮组织的生长分化、维持正常视觉、促进骨骼的发育具有重要生理功能;南瓜中的果胶能调节胃内食物的吸收速率,使糖类吸收减慢,可溶性纤维素能推迟胃内食物的排空,控制饭后血糖上升。果胶还能和体内多余的胆固醇结合在一起,使胆固醇吸收减少,血胆固醇浓度下降;南瓜含有丰富的钴,在各类蔬菜中含钴量居首位。钴能活跃人体的新陈代谢,促进造血功能,并参与人体内维生素B12的合成,是人体胰岛细胞所必须的微量元素。南瓜中所含的维生素C能防止硝酸盐在消化道中转变成致癌物质亚硝酸。南瓜中含有的甘露醇,减少粪便中毒素对人体的危害。南瓜能消除致癌物质亚硝胺的突变作用。有防癌功效。南瓜中含有丰富锌,参与人体内核酸、蛋白质合成,是肾上腺皮质激素的固有成分,为人体生长发育的重要物质。
沙参:桔梗科沙参属多年生草本植物。其味甘、微苦,性微寒;归肺、胃经。功能主治:养阴润肺、益胃生津。
芡实:为睡莲科植物芡的干燥成熟种仁。其味甘、涩,性平。归脾、肾经。功能主治:益肾固精,补脾止泻,除湿止带。用于遗精滑精,遗尿尿频,脾虚久泻,白浊,带下。
黄芪:又名绵芪。蝶形花科,多年生草本。其性温,味甘;归肺、脾经。功能主治:健脾补气、升阳举陷、固表止汗、利水消肿、生津养血、托毒排脓、敛疮生肌之功效。适用于肝损伤、肝炎及胃溃疡、胃炎等人群。
茯苓:为多孔菌科真菌茯苓的干燥菌核。其味甘、淡、性平。归脾、肺经。功能主治:渗湿利水;健脾和胃;宁心安神。用于小便不利;水肿胀满;痰饮咳逆;呕吐;脾虚食少;泄泻;心悸不安;失眠健忘;遗精白浊。
发明内容
本发明提供了一种以柿子、南瓜、沙参、芡实、黄芪、茯苓、琼脂、蜂蜜、麦芽糖为原料,开发出一种营养健康、具有养阴润肺、益胃生津、健脾和胃等保健功能的一种柿子保健软糖的加工工艺。
本发明的技术方案是,包括下述重量份的原料:柿子30-45份、南瓜10-15份、沙参2-5份、芡实3-6份、黄芪2-5份、茯苓2-5份、琼脂20-25、蜂蜜5-8份、麦芽糖3-6份。
采用以下步骤制备:
(1)原材料预处理:①柿子预处理:洗净、去皮取果肉,将取出的柿子果肉放入压榨机中搅拌成泥糊状,再将泥糊状的果肉置于干燥的铁锅中,加入足以浸没果肉的95%乙醇,密封加热,温度控制在50-65℃,时间为5-8小时,加热过后,打开锅盖,加入一定量的大豆粉,其添加量为柿子果肉量的0.75%-0.9%,充分搅拌30-40分钟后,再将柿子果肉放入蒸馏罐中,在78℃的条件下,蒸馏分离出其所含的乙醇,蒸馏结束后,用胶头滴管从蒸馏罐中吸取少量柿子汁,并将其滴入到铬酐的硫酸水溶液中,如果使清澈的铬酐的硫酸水溶液由橙色变为不透明的蓝绿色,说明柿子汁中的乙醇未完全蒸馏,需继续蒸馏,直至乙醇完全蒸馏出去,即可得到柿子果浆;
②南瓜:洗净、去皮、去瓤、去蒂、切成块,放入打浆机中,打成泥浆状,取出备用;
③中草药预处理:称取无霉变、虫蛀的沙参、芡实、黄芪、茯苓放入清水中浸泡8-10小时、切碎、置于烘干机中烘干,再将烘干后的中草药投入到超细研磨机中,研磨成粉末,过100-120目筛,备用;
(2)熬糖:将柿子果浆、南瓜泥、中药材粉末、琼脂、蜂蜜、麦芽糖置于带有搅拌器的熬糖锅内,加入适量的水加热搅拌,边熬煮边搅抖,温度为80-100℃,搅拌速度为26转/分。当熬至浓度为72-75%时即到达终点;
(3)浇模成型:趁热将搅拌到浓度为72-75%的物料倒入特制的模具内,待其自然冷却成型;
(4)干燥:将冷却成型后的软糖送入烘房内进行干燥,以除去其部分水分,烘房温度设置为60-65℃,相对湿度65-72%;
(5)包装:用糖纸包装即为成品。
本发明的有益效果:
1.柿子中富含的单宁为水溶性单宁,易溶于水和酒精等,并且单宁容易和蛋白中氨基酸的氨基端结合,使蛋白质变性凝固沉淀。本发明中的制备工艺通过对柿子果肉预处理,通过添加乙醇可以萃取出柿子中的单宁,进而加入大豆粉,大豆粉中富含水溶性蛋白质,单宁和水溶性蛋白质进行反应生成沉淀物,从而有效的对单宁进行了去除,改善了柿子的苦涩的口感。
2.成品软糖口感软滑,甜而不腻、营养丰富,添加的中药互相配伍,协同增效,使本发明的软糖具有养阴润肺、益胃生津、健脾和胃等保健功能,是一种低糖、低脂的健康食品。
实施例1,一种柿子保健软糖的加工工艺,按重量称取:柿子30公斤、南瓜10公斤、沙参2公斤、芡实3公斤、黄芪2公斤、茯苓2公斤、琼脂20公斤、蜂蜜5公斤、麦芽糖3公斤,其制备工艺包括以下步骤:
(1)原材料预处理:①柿子预处理:取30公斤柿子洗净、去皮取果肉,将取出的柿子果肉放入压榨机中搅拌成泥糊状,再将泥糊状的果肉置于干燥的铁锅中,加入足以浸没果肉的95%乙醇,密封加热,温度控制在55℃,时间为6小时,加热过后,打开锅盖,加入一定量的大豆粉,其添加量为柿子果肉量的0.75%,充分搅拌40分钟后,再将柿子果肉放入蒸馏罐中,在78℃的条件下,蒸馏分离出其所含的乙醇,蒸馏结束后,用胶头滴管从蒸馏罐中吸取少量柿子汁,并将其滴入到铬酐的硫酸水溶液中,如果使清澈的铬酐的硫酸水溶液由橙色变为不透明的蓝绿色,说明柿子汁中的乙醇未完全蒸馏,需继续蒸馏,直至乙醇完全蒸馏出去,即可得到柿子果浆;
②南瓜:取10公斤南瓜洗净、去皮、去瓤、去蒂、切成块,放入打浆机中,打成泥浆状,取出备用;
③中草药预处理:称取无霉变、虫蛀的沙参2公斤、芡实3公斤、黄芪2公斤、茯苓2公斤放入清水中浸泡10小时、切碎、置于烘干机中烘干,再将烘干后的中草药投入到超细研磨机中,研磨成粉末,过120目筛,备用;
(2)熬糖:将柿子果浆、南瓜泥、中药材粉末、20公斤琼脂、5公斤蜂蜜、3公斤麦芽糖置于带有搅拌器的熬糖锅内,加入适量的水加热搅拌,边熬煮边搅抖,温度为90℃,搅拌速度为26转/分。当熬至浓度为75%时即到达终点;
(3)浇模成型:趁热将搅拌到浓度为75%的物料倒入特制的模具内,待其自然冷却成型;
(4)干燥:将冷却成型后的软糖送入烘房内进行干燥,以除去其部分水分,烘房温度设置为65℃,相对湿度65%;
(5)包装:用糖纸包装即为成品。
实施例2,一种柿子保健软糖的加工工艺,按重量称取:柿子35公斤、南瓜13公斤、沙参3公斤、芡实3公斤、黄芪3公斤、茯苓2公斤、甘草1公斤、大枣1公斤、琼脂22公斤、蜂蜜6公斤、麦芽糖5公斤,其制备工艺包括以下步骤:
(1)原材料预处理:①柿子预处理:取35公斤柿子洗净、去皮取果肉,将取出的柿子果肉放入压榨机中搅拌成泥糊状,再将泥糊状的果肉置于干燥的铁锅中,加入足以浸没果肉的95%乙醇,密封加热,温度控制在60℃,时间为7小时,加热过后,打开锅盖,加入一定量的大豆粉,其添加量为柿子果肉量的0.85%,充分搅拌35分钟后,再将柿子果肉放入蒸馏罐中,在78℃的条件下,蒸馏分离出其所含的乙醇,蒸馏结束后,用胶头滴管从蒸馏罐中吸取少量柿子汁,并将其滴入到铬酐的硫酸水溶液中,如果使清澈的铬酐的硫酸水溶液由橙色变为不透明的蓝绿色,说明柿子汁中的乙醇未完全蒸馏,需继续蒸馏,直至乙醇完全蒸馏出去,即可得到柿子果浆;
②南瓜:取13公斤南瓜洗净、去皮、去瓤、去蒂、切成块,放入打浆机中,打成泥浆状,取出备用;
③中草药预处理:称取无霉变、虫蛀的沙参3公斤、芡实3公斤、黄芪3公斤、茯苓2公斤、甘草1公斤、大枣1公斤放入清水中浸泡9小时、切碎、置于烘干机中烘干,再将烘干后的中草药投入到超细研磨机中,研磨成粉末,过120目筛,备用;
(2)熬糖:将柿子果浆、南瓜泥、中药材粉末、22公斤琼脂、6公斤蜂蜜、5公斤麦芽糖置于带有搅拌器的熬糖锅内,加入适量的水加热搅拌,边熬煮边搅抖,温度为85℃,搅拌速度为26转/分。当熬至浓度为74%时即到达终点;
(3)浇模成型:趁热将搅拌到浓度为74%的物料倒入特制的模具内,待其自然冷却成型;
(4)干燥:将冷却成型后的软糖送入烘房内进行干燥,以除去其部分水分,烘房温度设置为63℃,相对湿度68%;
(5)包装:用糖纸包装即为成品。
实施例2中添加了2味中药材:甘草和大枣。
甘草:别名国老、甜草、乌拉尔甘草、甜根子。豆科、甘草属多年生草本,其性味甘平,归心、肺、脾、胃经。具补脾益气、润肺止咳、缓急止痛、缓和药性之效。
大枣:鼠李科,枣属。其味甘,性温。归脾、胃经。功能主治:补中益气,养血安神。用于脾虚食少,乏力便溏,妇人脏躁。
实施例3,一种柿子保健软糖的加工工艺,柿子35公斤、南瓜15公斤、沙参2公斤、芡实3公斤、黄芪3公斤、茯苓2公斤、甘草1公斤、大枣1公斤、黄精0.8公斤、莲子0.6公斤、琼脂25公斤、蜂蜜8公斤、麦芽糖6公斤,其制备工艺包括以下步骤:
(1)原材料预处理:①柿子预处理:取35公斤柿子洗净、去皮取果肉,将取出的柿子果肉放入压榨机中搅拌成泥糊状,再将泥糊状的果肉置于干燥的铁锅中,加入足以浸没果肉的95%乙醇,密封加热,温度控制在60℃,时间为7小时,加热过后,打开锅盖,加入一定量的大豆粉,其添加量为柿子果肉量的0.9%,充分搅拌35分钟后,再将柿子果肉放入蒸馏罐中,在78℃的条件下,蒸馏分离出其所含的乙醇,蒸馏结束后,用胶头滴管从蒸馏罐中吸取少量柿子汁,并将其滴入到铬酐的硫酸水溶液中,如果使清澈的铬酐的硫酸水溶液由橙色变为不透明的蓝绿色,说明柿子汁中的乙醇未完全蒸馏,需继续蒸馏,直至乙醇完全蒸馏出去,即可得到柿子果浆;
②南瓜:取15公斤南瓜洗净、去皮、去瓤、去蒂、切成块,放入打浆机中,打成泥浆状,取出备用;
③中草药预处理:称取无霉变、虫蛀的沙参2公斤、芡实3公斤、黄芪3公斤、茯苓2公斤、甘草1公斤、大枣1公斤、黄精0.8公斤、莲子0.6公斤放入清水中浸泡9小时、切碎、置于烘干机中烘干,再将烘干后的中草药投入到超细研磨机中,研磨成粉末,过120目筛,备用;
(2)熬糖:将柿子果浆、南瓜泥、中药材粉末、25公斤琼脂、8公斤蜂蜜、6公斤麦芽糖置于带有搅拌器的熬糖锅内,加入适量的水加热搅拌,边熬煮边搅抖,温度为80℃,搅拌速度为26转/分。当熬至浓度为75%时即到达终点;
(3)浇模成型:趁热将搅拌到浓度为75%的物料倒入特制的模具内,待其自然冷却成型;
(4)干燥:将冷却成型后的软糖送入烘房内进行干燥,以除去其部分水分,烘房温度设置为62℃,相对湿度65%;
(5)包装:用糖纸包装即为成品。
实施例3中添加了2味中药材:黄精和莲子。
黄精:又名鸡头黄精、黄鸡菜、笔管菜、爪子参、老虎姜、鸡爪参,为黄精属植物。其味甘,性平;归肺,脾,肾经。功能主治:滋肾润肺,补脾益气。
莲子:为睡莲科植物莲的干燥成熟种子。其味甘、平涩、无毒;干者甘、温涩、无毒。入心、脾、肾。功效主治:清心醒脾,补中养神,健脾开胃,止泻固精,益肾止带;心烦失眠,大便溏泄,久痢,腰疼,男子遗精,妇人赤白带下。

1.一种柿子保健软糖的加工工艺,其特征在于,包括下述重量份的原料:柿子30-45份、南瓜10-15份、沙参2-5份、芡实3-6份、黄芪2-5份、茯苓2-5份、琼脂20-25、蜂蜜5-8份、麦芽糖3-6份,其加工工艺包括以下步骤:
