背景技术
汤圆起源于宋朝。当时明州(现宁波市)兴起吃一种新奇的食品。首先各式汤圆把黑芝麻磨制成粉末状,然后猪油、白砂糖相继放入混合物揉成团做馅,外面用糯米粉搓成圆形,煮熟后,吃起来香甜可口,饶有风趣。因为这种糯米球煮在锅里又浮又沉,所以它最早叫“浮元子”,后来有的地区把“浮元子”改称元宵。汤圆在我国的悠久历史中,一直是广大人民喜爱的传统食物。随着现在人们生活水平的提高,人们对各种食品的选择更注重养生保健方面,而市场上能满足这样需求的汤圆并不多。
硒是人体必需的微量元素。硒参与合成人体内多种含硒酶和含硒蛋白 。其中谷胱甘肽过氧化物酶,在生物体内催化氢过氧化物或脂质过氧 化物转变为水或各种醇类,消除自由基对生物膜的攻击,保护生物膜 免受氧化损伤;硒参与构成碘化甲状腺胺酸脱碘酶。硒能提高人体免 疫,促进淋巴细胞的增殖及抗体和免疫球蛋白的合成。硒对结肠癌、皮肤癌、肝癌、乳腺癌等多种癌症具有明显的抑制和防护的作用,其 在机体内的中间代谢产物甲基烯醇具有较强的抗癌活性。硒与维生素E、大蒜素、亚油酸、锗、锌等营养素具有协同抗氧化的功效,增加抗氧化活性。同时,硒具有减轻和缓解重金属毒性的作用。

火龙果,好食不仅为其肉,还有其皮。火龙果,本名青龙果、红龙果 。原产于中美洲热带。火龙果营养丰富、功能独特,它含有一般植物 少有的植物性白蛋白及花青素,丰富的维生素和水溶性膳纤维。火龙 果有预防便秘、促进眼睛保健、增加骨质密度、帮助细胞膜形成、预 防贫血和抗神经炎、口角炎、降低胆固醇、皮肤美白防黑斑的功效外 ,还具有解除重金属中毒、抗自由基、防老年病变、瘦身、防大肠癌 等功效。而较新的研究结果显示,火龙果果实和茎的汁对肿瘤的生长 ,病毒及免疫反映抑止等病症上表现出了积极作用。
无花果是一种稀有水果,国内湖南、江苏、四川等地有种植,但在新疆阿图什地区栽培品质最优。无花果是无公害绿色食品,被誉为“21世纪人类健康的守护神”。 无花果的果实无论鲜品还是干品均味美可口。它富含多种氨基酸、有机酸、镁、锰、铜、锌、硼及维生素等营养成分。它不仅是营养价值高的水果,而且是一味良药。它性平甘味酸,有清热解毒、止泻通乳之功效,尤其对于痔疮便血、脾虚腹泻、咽喉疼痛、乳汁干枯等疗效显著。
茯苓,为多孔菌科真菌茯苓 Poria cocos (Schw.) Wolf 的干燥菌核。甘、淡,平。归心、肺、脾、肾经。利水渗湿,健脾宁心。用于水肿尿少,痰饮眩悸,脾虚食少,便溏泄泻,心神不安,惊悸失眠。
太子参,为石竹科植物孩儿参Pseudostellaria heterophylla (Miq.)Pax exPax et Hoffm.的干燥块根。甘、微苦,平。归脾、肺经。益气健脾,生津润肺。用于脾虚体倦,食欲不振,病后虚弱,气阴不足,自汗口渴,肺燥干咳。
目前市面上还未有一种含有富硒糯米、无花果、火龙果、茯苓、太子参配合的富硒保健汤圆。
发明内容
本发明旨在发明一种富硒保健汤圆及其制备方法。
为实现上述发明目的,本发明的技术方案如下:
本发明的富硒保健汤圆,由以下重量份原料制成:
富硒糯米粉30-50份、茯苓粉10-25份、太子参粉5-10份、生粉10-25份、无花果10-20份、玫瑰酱5-10份、火龙果5-10份、蔓越莓5-10份、红糖3-7份。
所述富硒糯米粉内每公斤含250-350微克硒。
所述的富硒保健汤圆,其制备方法包括以下步骤:
(1)按重量份称取富硒糯米粉、茯苓粉、太子参粉、生粉研磨,过200-300目筛,混合均匀后烘干,得到汤圆皮料原料;
(2)按重量份称取无花果、火龙果、蔓越莓切成粒径为1-3mm的颗粒,混合均匀后用黄油炒制5-10min;
(3)在炒制完毕的混合果粒中加入相应重量份的玫瑰花酱和红糖,搅拌均匀,制得汤圆馅料;
(4)在所述步骤(1)的汤圆皮料原料中加入适量温水,混合搅拌10-25min,直至形成面团;
(5)将所述步骤(4)的面团分成小团的粉团,在粉团中间嵌一个小窝,植入所述步骤(3)的汤圆馅料,收口搓圆揉光,在-35~-30℃下速冻25-40min,即得。
本发明的中药材来源及功效如下 :

本发明的有益效果为:
本发明提供的富硒保健汤圆,由富硒糯米粉、生粉、茯苓粉和太子参粉制成,不但有效改善了传统只用糯米粉和水来制作面皮的口感,更是增加了其保健养生价值。糯米粉中富含硒元素,使人们在食用汤圆时能够补充人体所必须的微量元素硒,提高人体免疫力和抗氧化作用;且充分利用了茯苓和太子参的中药作用,具有益气健脾,生津润肺,安神等作用,加入火龙果和无花果的果肉,不仅改善汤圆的味道、香味和色泽、而且具有降脂降压、美容养颜、增强免疫力、抗氧化、预防便秘的功效;本发明还提供了所述保健汤圆的制备方法,该方法简单易行,便于保存,可规模化生产加工,具有广阔的市场前景。
具体实施方式
下面通过实施例进一步说明本发明。应该理解的是,本发明的实施例是用于说明本发明而不是对本发明的限制。根据本发明的实质对本发明进行的简单改进都属于本发明要求保护的范围。
实施例1
一种富硒保健汤圆,由以下原料制成:
富硒糯米粉30kg、茯苓粉10kg、太子参粉5kg、生粉10kg、无花果10kg、玫瑰酱5kg、火龙果5kg、蔓越莓5kg、红糖3kg。
所述富硒糯米粉内每公斤含250微克硒。
所述的富硒保健汤圆,其制备方法包括以下步骤:
(1)将富硒糯米粉、茯苓粉、太子参粉、生粉研磨,过200目筛,混合均匀后烘干,得到汤圆皮料原料;
(2)将无花果、火龙果、蔓越莓切成粒径为1mm的颗粒,混合均匀后用黄油炒制5min;
(3)在炒制完毕的混合果粒中加入玫瑰花酱和红糖,搅拌均匀,制得汤圆馅料;
(4)在所述步骤(1)的汤圆皮料原料中加入适量温水,混合搅拌10min,直至形成面团;
(5)将所述步骤(4)的面团分成小团的粉团,在粉团中间嵌一个小窝,植入所述步骤(3)的汤圆馅料,收口搓圆揉光,在-35℃下速冻25min,即得。
实施例2
一种富硒保健汤圆,由以下原料制成:
富硒糯米粉38kg、茯苓粉15kg、太子参粉7kg、生粉15kg、无花果12kg、玫瑰酱7kg、火龙果6kg、蔓越莓7kg、红糖5kg。
所述富硒糯米粉内每公斤含280微克硒。
所述的富硒保健汤圆,其制备方法包括以下步骤:
(1)将富硒糯米粉、茯苓粉、太子参粉、生粉研磨,过250目筛,混合均匀后烘干,得到汤圆皮料原料;
(2)将无花果、火龙果、蔓越莓切成粒径为2mm的颗粒,混合均匀后用黄油炒制7min;
(3)在炒制完毕的混合果粒中加入玫瑰花酱和红糖,搅拌均匀,制得汤圆馅料;
(4)在所述步骤(1)的汤圆皮料原料中加入适量温水,混合搅拌15min,直至形成面团;
(5)将所述步骤(4)的面团分成小团的粉团,在粉团中间嵌一个小窝,植入所述步骤(3)的汤圆馅料,收口搓圆揉光,在-32℃下速冻30min,即得。
实施例3
一种富硒保健汤圆,由以下原料制成:
富硒糯米粉45kg、茯苓粉20kg、太子参粉8kg、生粉20kg、无花果16kg、玫瑰酱8kg、火龙果8kg、蔓越莓8kg、红糖6kg。
所述富硒糯米粉内每公斤含320微克硒。
所述的富硒保健汤圆,其制备方法包括以下步骤:
(1)将富硒糯米粉、茯苓粉、太子参粉、生粉研磨,过250目筛,混合均匀后烘干,得到汤圆皮料原料;
(2)将无花果、火龙果、蔓越莓切成粒径为2mm的颗粒,混合均匀后用黄油炒制8min;
(3)在炒制完毕的混合果粒中加入玫瑰花酱和红糖,搅拌均匀,制得汤圆馅料;
(4)在所述步骤(1)的汤圆皮料原料中加入适量温水,混合搅拌20min,直至形成面团;
(5)将所述步骤(4)的面团分成小团的粉团,在粉团中间嵌一个小窝,植入所述步骤(3)的汤圆馅料,收口搓圆揉光,在-30℃下速冻35min,即得。
实施例4
一种富硒保健汤圆,由以下原料制成:
富硒糯米粉50kg、茯苓粉25kg、太子参粉10kg、生粉25kg、无花果20kg、玫瑰酱10kg、火龙果10kg、蔓越莓10kg、红糖7kg。
所述富硒糯米粉内每公斤含350微克硒。
所述的富硒保健汤圆,其制备方法包括以下步骤:
(1)将富硒糯米粉、茯苓粉、太子参粉、生粉研磨,过300目筛,混合均匀后烘干,得到汤圆皮料原料;
(2)将无花果、火龙果、蔓越莓切成粒径为3mm的颗粒,混合均匀后用黄油炒制10min;
(3)在炒制完毕的混合果粒中加入玫瑰花酱和红糖,搅拌均匀,制得汤圆馅料;
(4)在所述步骤(1)的汤圆皮料原料中加入适量温水,混合搅拌25min,直至形成面团;
(5)将所述步骤(4)的面团分成小团的粉团,在粉团中间嵌一个小窝,植入所述步骤(3)的汤圆馅料,收口搓圆揉光,在-30℃下速冻40min,即得。
Claims (3)
1.一种富硒保健汤圆,其特征在于,由以下重量份原料制成:
富硒糯米粉30-50份、茯苓粉10-25份、太子参粉5-10份、生粉10-25份、无花果10-20份、玫瑰酱5-10份、火龙果5-10份、蔓越莓5-10份、红糖3-7份。
2.如权利要求1所述的一种富硒保健汤圆,其特征在于,所述富硒糯米粉内每公斤含250-350微克硒。
3.如权利要求1所述的一种富硒保健汤圆,其特征在于,其制备方法包括以下步骤:
(1)按重量份称取富硒糯米粉、茯苓粉、太子参粉、生粉研磨,过200-300目筛,混合均匀后烘干,得到汤圆皮料原料;
(2)按重量份称取无花果、火龙果、蔓越莓切成粒径为1-3mm的颗粒,混合均匀后用黄油炒制5-10min;
(3)在炒制完毕的混合果粒中加入相应重量份的玫瑰花酱和红糖,搅拌均匀,制得汤圆馅料;
(4)在所述步骤(1)的汤圆皮料原料中加入适量温水,混合搅拌10-25min,直至形成面团;
(5)将所述步骤(4)的面团分成小团的粉团,在粉团中间嵌一个小窝,植入所述步骤(3)的汤圆馅料,收口搓圆揉光,在-35~-30℃下速冻25-40min,即得。
