Abstract
LA PRESENTE INVENCIÓN SE REFIERE A UNA ALBÚMINA DE GUISANTE CARACTERIZADA POR QUE SU ACTIVIDAD EMULSIONANTE ESTÁ MEJORADA YA QUE PUEDE EMULSIONAR MÁS DE 600 ML DE ACEITE DE MAÍZ POR GRAMO DE ALBÚMINA. LA INVENCIÓN TAMBIÉN SE REFIERE A UN MÉTODO PARA OBTENER LA ALBÚMINA DE GUISANTE DE ACUERDO CON LA INVENCIÓN. FINALMENTE SE REFIERE AL USO DE LA ALBÚMINA DE GUISANTE DE ACUERDO CON LA INVENCIÓN EN APLICACIONES INDUSTRIALES, EN PARTICULAR ALIMENTICIAS Y FARMACÉUTICAS.
