Description
Verfahren zur Herstellung von Speiseeis mittelst einer drehbaren Kühltrommel und Maschine zur Ausführung des Verfahrens. Vorliegende Erfindung betrifft ein Ver fahren zur Herstellung von Speiseeis mittelst einer drehbaren Kühltrommel, welche von einem in ihrem Innern befindlichen Kälte mittel gekühlt wird, und eine Maschine zur Ausführung des Verfahrens.
Als Kältemittel kann eine Kältemischung, zum Beispiel Eis und Salz, in Frage kom men, oder bei Anwendung einer Kälte maschine eine gekühlte Flüssigkeit mit tie fem Gefrierpunkt, z. B. Sole, oder das Kälte mittel der Kältemaschine selbst, z. B. Am moniak, das unter Verdampfung die Trom mel durchstreicht.
Auf beiliegender Zeichnung ist die Ma schine zur Ausführung des Verfahrens in zwei Ausführungsbeispielen dargestellt.
Es zeigt Fig. 1 einen Längsschnitt durch die Maschine des ersten Ausführungsbei spiels, welches mit einer Stopfbüchse ver sehen ist; Fig. 2 ist ein Querschnitt nach A-A der Fig. 1; Fig. 3 zeigt einen Längs schnitt durch die Maschine des zweiten Aus führungsbeispiels, welches keine Stopfbüchse besitzt. Beim Ausführungsbeispiel nach Fig. 1 bezeichnet 1 die zur Aufnahme des Kälte mittels dienende Kühltrommel, welche, aus einem gut leitenden Material wie Aluminium oder Kupfer bestehend, auf der Hohlwelle 2, durch welche das Kältemittel ein- und wie der austritt (siehe Pfeilrichtung), festsitzt.
Die Hohlwelle ist in den Ständern 3 und 3' gelagert. Mittelst der Kurbel 4 ist die Kühltrommel drehbar. Das Abstreichmesser 5 dient zum Abschälen des fertigen Speise eises, welches mittelst des Trichters 6 in dem darunter gestellten Konservator aufgefangen wird. In der Kühltrommel 1 ist eine zweite Trommel 7 angeordnet, welche bezweckt, das Kältemedium aus der Mitte zu verdrängen und in günstiger Weise an die Kühltrommel wände zu leiten. Zwecks Verteilung des Speiseeises ist eine Walze 8 angeordnet.
In Fig. 3 ist eine Ausführungsform ge zeigt, welche dadurch stopfbüchsenlos her gestellt werden kann, dass sich in der dreh baren Kühltrommel eine feststehende Trom mel befindet, welche entsprechend Fig. 1 das Kältemedium aufnimmt und die Kälte dann erst durch die Wandungen dieser Trommel hindurch an die rotierende Trommel abgibt.
In Fig. 1 wird das Kältemedium durch eine hohle Welle in die Kühltrommel ein geleitet und aus ihr wieder ausgeführt.
Die Kühltrommel kann auch mit einer verschliessbaren Öffnung zum Einfüllen des Kältemittels versehen werden, welches dann nach Gebrauch wieder durch die gleiche oder eine andere, ebenfalls gut verschliessbare Öffnung entleert werden kann. Die Öffnun gen können an den Stirnwänden der Trom mel angeordnet werden.
Die Trommel kann auch vertikal gestellt, und die Kälteabgabe auf einer der Stirnseiten ausgenützt werden. Es muss sich nur das Kältemittel im Innern der Trommel befinden und diese selbst drehbar sein.

The present invention relates to a process for the production of ice cream by means of a rotatable cooling drum which is cooled by a refrigerant located inside it, and a machine for carrying out the method.
The refrigerant can be a cold mixture, for example ice and salt, in question, or when using a refrigeration machine, a cooled liquid with a deep freezing point, z. B. brine, or the refrigeration medium of the refrigerator itself, z. B. Am moniak, which passes through the drum with evaporation.
In the accompanying drawing, the machine for performing the method is shown in two embodiments.
It shows Fig. 1 is a longitudinal section through the machine of the first game Ausführungsbei, which is seen ver with a stuffing box; Figure 2 is a cross-section along A-A of Figure 1; Fig. 3 shows a longitudinal section through the machine of the second exemplary embodiment from which has no stuffing box. In the exemplary embodiment according to FIG. 1, 1 denotes the cooling drum which is used to absorb the cold and is made of a highly conductive material such as aluminum or copper, on the hollow shaft 2 through which the refrigerant enters and exits (see direction of arrow), stuck.
The hollow shaft is mounted in the stands 3 and 3 '. The cooling drum can be rotated by means of the crank 4. The scraper 5 is used to peel off the finished ice cream, which is collected by means of the funnel 6 in the conservator below. In the cooling drum 1, a second drum 7 is arranged, which aims to displace the cooling medium from the center and to guide it to the walls of the cooling drum in an advantageous manner. A roller 8 is arranged for the purpose of distributing the ice cream.
In Fig. 3 shows an embodiment ge, which can be made without stuffing box forth that there is a fixed Trom mel in the rotating cooling drum ble, which according to FIG. 1 absorbs the cooling medium and then the cold only through the walls of this drum to the rotating drum.
In Fig. 1, the cooling medium is passed through a hollow shaft into the cooling drum and run out of it again.
The cooling drum can also be provided with a closable opening for filling in the refrigerant, which can then be emptied again after use through the same or another, likewise well closable opening. The openings can be arranged on the end walls of the drum.
The drum can also be placed vertically and the release of cold on one of the end faces can be used. Only the refrigerant has to be inside the drum and the drum itself needs to be rotatable.
