O ASCóRBICO". A invenção provê um processo para reo pelo menos um precursor de ácido ascórbico, compreendendo converter o citado precursor em pelo menos um produtos, o citado pelo menos um produto sen terciária na qual o número de átomos agregados de sendo que a citada composição extratora compreendador de extração polar por um mol de extrator primário; e submeter a citada composição orgânca extratora contendo ácido ascórbico a uma operação de separação com solução aquosa a uma temperatura pelo menos 20°C maior que a temperatra na qual a citada conversão é realizada; através da qual se obtém uma solução aquosa de ácido ascórbico na qual a concentração de ácido ascórbico é maior que 5%.
