Abstract

La presente invención se refiere a un procedimiento para la preparación de una solución acuosa que contiene L-psicosa mediante la formación de una primera D-psicosa a partir de D-fructosa que está presente disuelta en una solución acuosa por tratamiento con una epimerasa in vitro, tras lo cual la primera D-psicosa se reduce in vitro a alitol mediante tratamiento con una oxidorreductasa dependiente de NAD(P)H correspondiente y, tras la desactivación y/o ultrafiltración de la epimerasa para formar L-psicosa, se trata con una oxidorreductasa dependiente de NAD(P)⁺ correspondiente, tras lo cual se eliminan la epimerasa desactivada y las oxidorreductasas.
