Está compuesto por una cámara, donde se desinfectan los alimentos mediante gas ozono producido por un generador a base de lámparas ultravioleta. Con este sistema se requiere un corto tiempo de contacto entre producto y ozono para lograr las mejores condiciones de desinfección, con una alta eficiencia y evita el uso de elementos químicos difíciles de manejar, almacenar y que producen residuos que son motivo de rechazo por parte de las autoridades sanitarias. La generación de ozono por este sistema es de bajo costo al usar lámparas de bajo consumo, a la vez que se erradica el uso de cloro o ácido peracético.
