Abstract

Un proceso para preparar un cultivo láctico iniciador, que consiste en -cultivar, cuando menos una, cepa de bacterias generadoras de ácido láctico bajoaireacion y en un medio nutriente adecuado, al que se anadio cuando menos un compuesto deporfirina , y cosechar las bacterias al cabo del dicho cultivo. Elpresente invento también se refiere al uso de cultivos lácticos inciadores que se obtuvo de acuerdo con el mencionado proceso, para peparar un productofermentado.
