Abstract

También se revelan varios ingredientes funcionales de alimentos que comprenden la emulsion oel gel de la presente, que son utiles como ingredientes de alimentos, bebidas y alimentos para animales, así como también de cosméticos. Asimismo se detallanlos procesos para la produccion de dicha emulsion y de dicho gel.An emulsion is provided comprising a composition of lupine bean, water and fat proteins, in which the lupine bean proteins are present in a concentration of less than 65%, sufficient amount to stabilize said emulsion.
