Abstract
Se provee una emulsion que comprende una composicion de proteínas de poroto lupín, agua y grasas, en la cual las proteínas de poroto lupín están presentesen una concentracion de menos del 65%, cantidad suficiente como para estabilizar dicha emulsion.En otro aspecto, la solicitud se relaciona con un gel quecomprende dicha composicion de proteínas de poroto lupín y agua. También se revelan varios ingredientes funcionales de alimentos que comprenden la emulsion oel gel de la presente, que son utiles como ingredientes de alimentos, bebidas y alimentos para animales, así como también de cosméticos. Asimismo se detallanlos procesos para la produccion de dicha emulsion y de dicho gel.An emulsion is provided comprising a composition of lupine bean, water and fat proteins, in which the lupine bean proteins are present in a concentration of less than 65%, sufficient amount to stabilize said emulsion. In another aspect, the application it is related to a gel that comprises said composition of lupine and water bean proteins. Various functional food ingredients are also disclosed which comprise the emulsion or the gel of the present, which are useful as food, beverage and animal feed ingredients, as well as cosmetics. The processes for the production of said emulsion and said gel are also detailed.
