Abstract

Fremgangsmåte for brygging og servering av øl, der gjæring skjer ved et selvprodusert trykk fra gjæringsprosessen regulert til ca 1,8 bar og en temperatur regulert til under 30?C for at ølet skal ivareta/akseptere en del av sin egen C02-produksjon slik at ølet får et høyere CO2-innhold enn det som er normalt for en overgjæringsprosess. Bryggingen og serveringen kan skje ved hjelp av apparatet beskrevet nedenfor. Apparat for brygging og servering av øl, omfattende en lukket enkelttank (10), en uttaksenhet (40) anordnet med en oppdriftsdel (42) og en vekt (44) for å sikre at væske tas ut fra en tappesone (11), og et vannsprederorgan (31) anordnet over en passasje (26) i bunnen av tanken (10) slik at vann som tas inn, fordeles for å oppnå en nær optimal sluttmiksing av væskeblanding (13) i tanken (10).
