Abstract

5-Acyl-2-(furfurylthio)dihydro-2,5-dialkyl-3-(2H)furanones of the formula (I), (where R11,R12,R13 and R14 are each H or CH3), and their cis- and trans-isomers are new. Used for improving the flavour and aroma of foodstuffs, chewing gum, toothpaste, medicines and tobacco. They are prepd. by reacting furfuryl mercaptan with an alpha, beta-diketone. In an example, furfuryl mercaptan was reacted with diacetyl to give 5-acetyl-2-(furfurylthio)dihydro-2,5-dimethyl-3(2H)-furanone.
