Abstract
Una fracción de proteína y una fracción de grasa estable a la oxidación son recuperadas desde recortes de carne. Los recortes son triturados, mezclados con un ácido apto para el consumo humano con un pH de 3,6 a 4,4, para formar una fracción de proteína líquida y una fracción de grasa sólida.
