Abstract
THE PRESENT INVENTION RELATES TO VEGETARIAN TYPE YEAST EXTRACT WITH MEAT FLAVOR, A METHOD FOR PREPARING THE SAME AND ITS APPLICATION THE METHOD COMPRISES THE STEPS: (1) ADDING YEAST EXTRACT, ADDITIVES AND WATER INTO A REACTOR AND MIXING THEM, WHEREIN THE ADDITIVES INCLUDES HYDROLYZED VEGETABLE PROTEIN, AMINO ACIDS, REDUCING SUGARS, DISODUIM 5’-RIBONUCLEOTIDE, AND VITAMIN B1; AND (2) THE MIXTURE OBTAINED FROM THE STEP (1) IS PERFORMED THERMAL REACTION AT THE pH OF 5.0-7.0, 105°C-135°C FOR 15-60 MINS.THE THERMAL REACTION TECHNOLOGY ACCORDING TO THE PRESENT INVENTION CAN ENHANCE THE SCENT AND TASTE OF THE YEAST EXTRACT AND THE CHARACTERISTIC FLAVOR AND THE APPLICATION EFFECTS.WHEN THE RESULTANT YEAST EXTRACT PRODUCT IS ADDED INTO VARIOUS FOODS (SUCH AS MENUS AND STUFFING MATERIALS), THE TASTE, FLAVOR AND NUTRITION OF THE FINAL PRODUCT CAN BE EFFECTIVELY INCREASED.THE ADVANTAGES OF THE PRESENT INVENTION ARE THAT THE RESULTANT YEAST EXTRACT DOES NOT CONTAIN MEAT ELEMENT, AND AT THE SAME TIME IT HAS STRONGER SCENT AND TASTE AND CAN BE USED IN VEGETARIAN FOOD.
