Abstract

La presente invención se refiere a un producto de gelatina que comprende un componente de núcleo, en el que el componente de núcleo está revestido parcial o completamente por un gel de gelatina. El gel de gelatina se produce a partir de un compuesto de colada homogéneo que contiene los siguientes constituyentes disueltos en agua: - del 3 al 20% en peso de gelatina que tiene un peso molecular medio, determinado mediante cromatografía en gel, de al menos 130 kDa, preferiblemente al menos 145 kDa, en el que la proporción de la fracción de peso molecular por encima de 100 kDa es de al menos el 35% en peso, preferiblemente de al menos 45% en peso - hasta el 60% en peso, preferiblemente del 15 al 60% en peso, de jarabe de glucosa con una viscosidad de menos de 1000 mPa·s, preferiblemente menos de 800 mPa·s, medido con un contenido en materia seca del 80% en peso y a una temperatura de 60ºC; y - hasta el 60% en peso, preferiblemente del 15 al 60% en peso, de sacarosa, en el que el compuesto de colada comprende un contenido en materia seca de al menos el 70% en peso. La invención también se refiere a un método para producir tales productos de gelatina.
