Abstract

La presente invención se relaciona con una composición que comprende compuestos sensibles a la oxidación y al menos un complejo proteico de hierro-caseína, en donde el complejo es un complejo de hierro-caseína no micelar que comprende hierro exógeno, caseína y ortofósforo exógeno. Tal complejo de hierro-caseína no causa favorablemente una oxidación significativa de compuestos sensibles tales como los LC-PUFA, las vitaminas y los polifenoles.
