Abstract

La presente invención se refiere a un concentrado alimenticio salado emulsificado que comprende en peso del concentrado alimenticio: a. 15 - 50% en peso de agua; b. 15 - 60% en peso de aceite comestible; c. 13 - 40% en peso de peso seco de almidón no gelatinizado; d. 50 - 350 mmol por 100 g de concentrado alimenticio de catión de metal alcalino seleccionado de Na+, K+ y combinaciones de los mismos; e. manano de levadura en una cantidad de al menos 0.6% en peso del aceite comestible; y f. 0 - 10% en peso de polvos vegetales y/o extractos vegetales; en donde la proporción p/p de aceite a agua es al menos 0.8:1 y en donde la proporción p/p de almidón no gelatinizado en peso seco a agua cae en el rango. de 0.35:1 - 2.1:1. La presente invención se refiere además a un proceso para preparar el concentrado alimenticio salado emulsificado y a un método para preparar un producto salado comestible que usa el concentrado alimenticio salado emulsificado.
