Abstract
Esta invención se refiere a un jugo desacidificado, asi como a un procedimiento para la desacidificacion de un jugo de arándano a ser desacidificado que se eluye en un lecho o una resina de intercambio anionico débil a una rapidez (BV/h) de modo que el 5 jugo de arándano desacidificado que deja la elucion tiene un pH = pKa1 (acido malico) < pH < pKa (acido benzoico); la invención también se refiere a una composición alimenticia que comprende este jugo de fruta desacidificado.
