Abstract
La presente invención proporciona sistemas, dispositivos, polinucleótidos de señalización (SPN, por sus siglas en inglés), agentes de detección y métodos para determinar la presencia o ausencia de uno o más alergenos en una muestra, particularmente una muestra de alimentos. El sistema de detección incluye un muestreador por separado, al menos un recipiente de detección desechable para la recepción y procesamiento de una muestra, así como dispositivo de detección para medir una señal de fluorescencia. Se proporcionan como agentes de detección, SPN derivados de aptámeros que se unen a los alergenos. Los SPN tienen una estructura única abierta y están marcados con un fluoróforo. Se miden los cambios en la polarización de fluorescencia de los SPN cuando se unen a los alergenos, con el fin de calcular el contenido de alergenos en una muestra.
