Abstract

La presente invención se refiere a un método para producir una yema de huevo que tiene un nivel muy alto de proteínas de factor antisecretor (AF), en particular con un contenido muy elevado de fragmento de proteína AF que consiste esencialmente la secuencia de aminoácidos como se muestra en SEQ ID NO 1 (AF 16) y/o SEQ ID NO 2 (AF-8), el proceso comprende alimentar durante al menos 4 semanas un ave de corral, tal como una gallina, de un alimento para aves de corral granulado que induce AF-16 que comprende al menos 0.14% de triptófano libre, tal como 1 a 2 g de triptofano/kg de alimento, y luego recolectar el huevo del ave de corral, separar la yema de huevo de la clara de huevo, y alternativamente secado por pulverización, molienda, lixiviación, extracción, evaporación, filtración con membrana y/o secado por congelación de la yema de huevo. La presente invención se refiere además a la yema de huevo que tiene un nivel muy alto de proteínas de factor antisecretor (AF), producidas según el método de la invención, y su uso para la preparación de productos alimenticios funcionales y de productos farmacéuticos para el tratamiento y profilaxis de afecciones fisiológicas anormales causadas por ejemplo por niveles excepcionalmente altos de descarga de fluido corporal. La invención también se refiere a productos alimenticios y farmacéuticos preparados de esta manera.
