Abstract
Se describen modalidades de una composición que comprende (a) una dispersión de 40-99.9% (p/p) de producto derivado de planta y 0-60% (p/p) de disacárido exógeno, y (b) agua, en donde la composición tiene un contenido de agua de <5% (p/p). Los productos derivados de plantas adecuados incluyen sólidos de frutas, vegetales y productos derivados de savia o de néctar. Los sólidos de las frutas y/o vegetales se obtienen de un puré, un jugo o una combinación de los mismos. La composición además puede incluir color natural y/o sabor natural obtenidos de una fruta, un vegetal o una combinación de los mismos. En algunas modalidades, la composición además incluye <5% de un agente de fluidez. En algunas modalidades, la composición es un polvo que comprende una pluralidad de partículas, cada partícula que tiene una composición química sustancialmente similar. También se describen modalidades de productos que incluyen los polvos descritos, y métodos para hacer las composiciones.
