Abstract
Se proporcionan sustitutos de crema líquidos y métodos para elaborar los sustitutos de crema líquidos. En una modalidad general, la presente invención proporciona un sustituto de crema líquido que incluye 1) un colorante, 2) un aceite, 3) un sistema estabilizador hidrocoloide que comprende un componente de celulosa y un componente de goma en una cantidad suficiente para suspender el colorante, y 4) un sistema estabilizador emulsionante que comprende un emulsionante y una proteína en una cantidad suficiente para mantener estabilidad de emulsión en el sustituto de crema líquido. El componente de goma puede incluir kappa carragenina y iota carragenina que tienen una relación de peso kappa carragenina y iota carragenina de aproximadamente 3:1 a alrededor de 1:10. La relación de peso entre el componente de celulosa, el componente de goma, el emulsionante y la proteína es de aproximadamente 1: (0.005 - 8): (0.05-20): (0.025-50), respectivamente.
