Abstract
Una botana de frutas fabricada, en resumen, mediante la eliminación de la humedad en un jugo concentrado disponible comercialmente (por ejemplo, conteniendo aproximadamente del 30% de humedad) mediante calentar por un corto tiempo el jugo concentrado y vaciar el exceso de humedad para producir un jugo concentrado de fruta con alrededor del 15 a 20% de contenido de humedad, mezclar el concentrado del jugo de fruta de contenido de humedad reducido con purés de frutas y agentes gelificantes, preferiblemente ambos pectina y gelatina, para producir una masa cocida, y depositar la masa cocida en una máquina Magnate (Mogul) para producir botanas de fruta moldeada.
