Abstract
La invención se refiere al uso de por lo menos un tipo de nanopartículas carotenoides dispersibles en agua como moduladores de sabor en composiciones de materiales, a un método para modulación de sabor de composiciones de materiales, de acuerdo con las cuales por lo menos un tipo de nanopartículas carotenoides dispersibles en agua se agregan a las composiciones de materiales, y a moduladores de sabor para composiciones de materiales, conteniendo (A) por lo menos un tipo de nanopartículas carotenoides dispersibles en agua, y (B) por lo menos un compuesto azo que contiene por lo menos un grupo azo.
