Abstract

Un proceso para hacer una composicion de oligosacarido, comprende producir una composicion acuosa que comprende por lo menos un oligosacarido y por lo menos un monosacarido mediante sacarificacion del almidon, filtracion en membrana de la composicion acuosa para formar una corriente rica en monosacarido y una corriente rica en oligosacarido, y recuperacion de la corriente rica en oligosacarido. La corriente rica en oligosacarido es lentamente digestible por el sistema digestivo humano, y puede ser utilizada como un ingrediente alimenticio bajo en calorias que es alto en fibra dietetica soluble.
