Why uniform blur never looks like a real lens

A lens produces a gradient of defocus. Objects just behind the subject are slightly soft, objects further back are very soft, and the transition is continuous. Applying one blur strength to everything behind a cut-out subject produces a flat plane of mush that the eye reads as a sticker on a blurred backdrop.
