Why uniform blur never looks like a real lens
A lens produces a gradient of defocus. Objects just behind the subject are slightly soft, objects further back are very soft, and the transition is continuous. Applying one blur strength to everything behind a cut-out subject produces a flat plane of mush that the eye reads as a sticker on a blurred backdrop.
Depth-aware blur estimates how far each region sits from the camera and scales the blur accordingly. That gradient is what makes the result read as optical rather than applied, and it is the difference between the two approaches.
Edges are the second tell
Where the subject meets the background, real optical blur produces a slight bleed of background colour into the subject outline, and hair and fur remain semi-transparent with the background visible through them. A hard cut-out has neither.
That is why portraits with fine hair are the hardest case: a crisp mask against a blurred background gives you a subject that looks pasted in. Feathering the mask and allowing a little background bleed at the edge is what fixes it.
Bokeh is a shape, not just softness
Out-of-focus highlights take the shape of the lens aperture — circular on a wide-open fast lens, polygonal on a stopped-down one with straight blades. A background with bright points behind it should show those shapes rather than uniform smudges.
