fix(inkless:test): replace removed minio images with pgsty fork - #811

Upstream MinIO removed the minio/minio and minio/mc images from quay.io and Docker Hub and the binaries from dl.min.io, so the S3 integration tests fail to pull their container. Tests, system tests, the demo, and Antithesis now use the community-maintained pgsty/minio and pgsty/mc images, pinned to release tags. ## Testing - S3StorageTest, S3StorageMetricsTest, WriterIntegrationTest, and FileCleanerIntegrationTest pass locally. - kafka.server.InklessConfigsTest passes locally. - The s3-local demo compose creates the inkless bucket.
