Bump exporters to flow v0.6.0 and assert the worker idle/blocked metrics - #9

Point x/prometheus and x/otel at flow v0.6.0, which streams the worker_idle and worker_blocked histograms. Both exporters already surface 8A20 them generically (flow_worker_*_seconds and flow.worker_*); the tests now assert they reach the backend, not just process_latency.
