Update CI to Xcode 27 and fix the watchOS build (#1) * Build and test on Xcode 27 in CI macos-13 runners are retired and Xcode 15 can't build the 6.2 manifest. Move to the xcode-27 image (Xcode 27.0, iOS 27.0 simulators), bump actions/checkout to v7, and swap xcpretty (no longer on the image) for xcbeautify. Add pipefail so a failing test fails the job instead of being masked by the formatter. UIImage and SwiftUI helpers stay available.
