Improved performance with the HTTP optimized serializers

As part of the #42945, we want to use the reflection-free Jackson serializers/deserializers that based on our benchmarking improved the stability of response times, improved throughput and also the system resources utilization should be lower. It is a feature on the Quarkus side, and we'd like to help them gather some feedback about the feature to promote it to supported and have it enabled by default.
