Replace Deprecated Reactor Processors after Spring/Reactor Upgrade #104
Description
Replace (at least try to avoid) ReplayProcessor and other deprecated classes (deprecated after upgrading to newer reactor version).
E.g. with Sinks.many().replay() ... (cannot be used yet - as we currently use 3.3.0, see next comment)

Direct access to processors is deprecated in reactor v3.4.x and will be removed in v3.5.x

Unfortunately we cannot use the Sinks factories yet, as we opt for the aligned spring version approach. Sinks are introduced in reactor v3.4.0
